Job Title: Lead Culinary Operations Manager

About Us:

Arlo NoMad is a dynamic and innovative lifestyle hotel seeking a highly skilled Executive Sous Chef to lead our culinary operations. If you're passionate about people, driven by purpose, and clever in your approach, we'd love to hear from you.

The Executive Sous Chef will play a vital role in maintaining the highest standards of cleanliness, food quality, labor, and food costs across all food outlets. This includes performing all duties of the Executive Chef in their absence.

Key Responsibilities:

Menu Development:
  • Sourcing, pricing, and building relationships with vendors.
  • Recipe development and costing.
  • Presenting seasonal menu changes and holiday menus with the Area Executive Chef.
Food Cost & Budgeting:
  • Increasing food quality and consistency while decreasing costs.
  • Tight management of recipes, ingredients, and processes for allergies and quality control.
  • Sales analysis and waste awareness.
  • Maintaining inventory within established guidelines.
Team Management:
  • Training kitchen staff on food preparation, safety, equipment operation, and sanitation.
  • Hiring in conjunction with HR and Area Executive Chef.
  • Supervision and scheduling.
  • Monitoring efficiency, productivity, and workflow.
  • Flexing staffing to seasonal trends and scaling labor to revenue.
Education & Training:
  • Oversight of training tool development for program implementation.
  • Creation of menu descriptions, allergy charts, recipe books, and prep lists.
  • Staff tastings and education at pre-shift meetings.
Health & Safety:
  • Compliance with federal, state, and local health regulations and department sanitation procedures.
  • Establishing and maintaining cleaning and maintenance schedules.
  • Staff training and education on food safety items.
  • Inspection preparedness.

About the Role:
