Overview:

The Assistant Kitchen Manager will play a crucial role in ensuring the efficient and profitable operation of the kitchen. This position requires a focus on maintaining high standards of cleanliness and sanitation while overseeing daily kitchen activities.

Responsibilities:
  1. Assist in training new kitchen staff and provide support during peak service times.
  2. Supervise daily kitchen operations and manage the preparation and presentation of culinary offerings.
  3. Ensure the kitchen is opened and closed properly, with all tasks completed as assigned.
  4. Maintain rigorous food safety and sanitation standards.
  5. Collaborate with restaurant and banquet teams to synchronize service and meal timing.
  6. Contribute to menu development and promotional initiatives.
  7. Operate kitchen equipment safely and report any malfunctions promptly.
  8. Manage inventory and procurement of supplies in alignment with budgetary guidelines.
  9. Monitor staffing levels to meet guest service expectations and operational goals.
  10. Implement and uphold safety protocols within the kitchen environment.
  11. Establish and enforce cleaning schedules for kitchen staff, ensuring compliance.
  12. Provide necessary supplies, equipment, and uniforms to all kitchen personnel.
  13. Communicate effectively with staff regarding areas needing attention and ensure follow-up.
  14. Assist in training staff on safety procedures and oversee their adherence to emergency protocols.
  15. Participate in investigations related to staff accidents as needed.
  16. Understand and comply with loss prevention policies and procedures.
  17. Oversee the stewarding team, ensuring cleanliness and organization across all kitchen outlets.
Qualifications:
Education:
  • Culinary Degree preferred.
Skills:
  • Comprehensive understanding of restaurant and banquet operations.
  • Knowledge of sanitation and food safety standards.
  • Strong decision-making and problem-solving abilities.
  • Excellent interpersonal skills with both customers and staff.
  • Familiarity with overall hotel operations as they relate to kitchen management.
  • Ability to effectively manage labor resources.
  • Proficient presentation and communication skills.
  • Strong organizational capabilities.
  • Effective conflict resolution and change management skills.
  • Competence in training and facilitating staff development.
  • Understanding of purchasing and inventory management.
  • Knowledge of safety regulations and compliance standards.
Experience:
  • Proven experience in financial management, including understanding P&L statements and managing budgets.
