Position Overview
The Culinary Supervisor, under the direction of the Executive Chef, plays a vital role in the planning, preparation, and production of culinary offerings for various dining venues and events within the hotel. This position is instrumental in menu creation, food specifications, and recipe development while overseeing kitchen staff to ensure the highest standards of food quality and hygiene are maintained.
Key Responsibilities
- Assist the Executive Chef in designing menus for all dining outlets.
- Train, supervise, and assess the performance of kitchen staff.
- Coordinate with the culinary team to ensure efficient and cost-effective food preparation.
- Authorize the requisition of food supplies and products.
- Maintain exemplary standards of cleanliness and safety in all kitchen areas.
- Implement training programs to enhance staff knowledge of safety and sanitation practices.
- Develop and standardize recipes and techniques to ensure consistent quality and minimize food costs.
- Participate in Food & Beverage meetings as required.
- Collaborate with the catering team regarding food production for special events.
- Oversee the cooking of complex dishes requiring advanced culinary skills.
- Evaluate food products to ensure quality standards are met.
- Engage with service staff to ensure food production meets and exceeds guest expectations.
- Assist in evaluating kitchen staff performance, providing feedback and guidance.
- Maintain a regular cleaning and maintenance schedule for kitchen equipment.
- Provide ongoing training and professional development for kitchen personnel.
- Encourage staff motivation and development through cross-training opportunities.
- Uphold professional standards and conduct as outlined in company policies.
Qualifications
Minimum of six years of experience in the culinary field or a combination of education and experience. Proficient in safety regulations and programs. Must possess strong communication skills in English, with additional language skills being advantageous. Ability to handle challenging situations with professionalism and poise. Competent in kitchen mathematics for menu costing. Basic computer skills, including proficiency in spreadsheets and word processing. Valid Food Handlers Safety Certificate required. Capable of problem-solving and adapting to various situations. Experience in managing multiple priorities effectively. Knowledge of business contracts is a plus. Ability to work independently and operate kitchen equipment proficiently. Proven leadership skills to train and motivate kitchen staff for optimal performance. Ability to create innovative and healthy menus that meet quality and value expectations for guests.
