About the Role

We are seeking a highly skilled and experienced Culinary Operations Assistant to join our team at Knute Nelson. As a key member of our Dining Services department, you will play a vital role in ensuring the highest quality food preparation and service for our residents.

Key Responsibilities
  • Supervision and Leadership: Assist the Culinary Supervisor in supervising personnel, including interviewing, hiring, training, and evaluating staff. Provide day-to-day work direction and problem-solving as issues arise.
  • Scheduling and Coordination: Help create weekly employee schedules to ensure production and service coverage for resident populations and catering needs. Request dining services team members to work for absent employees when necessary.
  • Purchasing and Inventory Management: Utilize online ordering systems to source, verify, and purchase food and supplies. Monitor declining balance spreadsheets to maintain food and supplies budgets. Adhere to purchasing from approved vendors as determined by the Culinary Supervisor.
  • Food Production and Preparation: Monitor daily workflow and assign preparation tasks to balance food production among team members. Follow recipes and assist with recipe modification and development. Prepare foods using methods that maintain nutrition, flavor, appearance, tenderness, and quality.
  • Food Safety and Sanitation: Ensure safe minimum internal and cooking temperatures are reached for all items. Properly store hot and cold food per regulations. Maintain clean and sanitary kitchen environments at all times.
Requirements
  • Education and Experience: High school diploma or equivalent, with a minimum of two years of experience working within a kitchen/culinary food service operation, preferably in a healthcare or senior dining setting.
  • Food Safety and Sanitation: Completion of a state-approved food safety course is strongly preferred.
  • Communication and Teamwork: Ability to work effectively with a variety of staff and residents with differing values, attitudes, capabilities, and dispositions.
  • Physical Demands: Ability to physically perform the duties required by the position.
  • Language Skills: Required to have the ability to read, write, and speak English well enough to communicate with staff, residents, and visitors.
