Position Summary

Provide guests with consistent quality drinks up to the Biltmore luxury standard. The Biltmore Mixologist is a professional bartender who specializes in the art of mixology, combining liquors and other ingredients in order to create unique and flavorful cocktails. Must have an in-depth knowledge of a wide range of beverage recipes and be creative in their approach to mixing drinks. Managing bar inventory and maintaining a high standard of product quality and service. This role requires extensive knowledge of alcohol, including its history and variations, as well as a passion for experimenting with new drink recipes.

Menu and Drink Creation
  • Serves all alcoholic beverages in accordance with all Florida regulations and alcohol awareness training standards; creating experiences though our beverage program.
  • Have full knowledge of all cocktail items, mixers, garnishes, contents, costing, and preparation methods.
  • Create and push the limits of what mixed drinks can be by using expert knowledge to innovate drinks and cocktails.
  • Craft beer menu in coordination with Brewpub Brewery staff.
  • Utilize appropriate stemware/glassware as required by company standards, polish glassware, and stock bar supplies to par levels.
  • Research and document results of staff development efforts through measurable tools available, such as guest comment cards, mystery shoppers, internal critiques, lift in average checks, staff retention levels, testing opportunities of staff knowledge and management input.
  • Product consistency, establish recipe cards for all beverage cocktails
Service Excellence
  • Anticipate and accommodate the needs of the guests while providing professional and exceptional service to ensure guest satisfaction
  • Maintain a clean and organized bar area
  • Ensure that all products are fresh and stored to ensure product quality, in particular to fruits, vegetables, garnishes, juices and other perishable items
  • Provide high level of excellence and maintain customer service in a friendly and professional demeanor
  • Maintains awareness of industry trends in service, innovative product and presentation
Management
  • Properly set-up floor and other opening/closing procedures as directed by the Director of Food and Beverage
  • Attends and participates in departmental meetings and presentations
  • Oversee and control labor costs and trends
  • Coaching and counseling, including mentorship of staff.
  • Actively participate in the selection and recruiting process by seeking exceptional talent
  • Monitor and manage the ordering of all beer, liquor, wine, mixers, garnishes, and bar tool equipment
  • Ensure proper par levels of all bar items, including glassware
  • Maintain proper stock for all syrups, fruits and vegetables
  • Maintain a full understanding of Craftable for ordering, requisition, recipes and inventory
Customer relations
  • Development and integration of an accessible and user-friendly database system which will track use and preferences of frequent guests - OpenTable
  • Maintenance, communication and maximized use of guest database information
Product and Service Knowledge and Development
  • Ongoing professional development of product knowledge in order to be current with changing and developing trends, expectations and growth opportunities, with applied communication methods to inform and train staff on an ongoing basis.
  • Development and adherence to a professional service delivery system, with techniques and applications to be communicated and trained to staff on an ongoing basis.

Public Relations

  • Sponsorships - Create and maintain relationships with vendors and brands
Technical Expertise for Hotel Related Software
  • Craftable - Foodager and Bevager
  • POS Systems such as Aireus or similar

  • Maintain professional appearance standards as directed in the hotels grooming guidelines to ensure representation of the outlet.
  • Dress for Success - adapt a style that reflects the image of the new design and which sets tone for the F&B team. Your attire needs to "fit" into the new design

Qualifications:

Education:

University or College Degree in Hospitality, Hotel and Restaurant Management, Culinary, Business/Administration, Food Service Management, Education, Restaurant Management, Management, Tourism, or Human Resources Management.
