Position Overview:
The Lead Mixologist is responsible for overseeing the performance of the Bar Team during each shift. This role involves taking orders, crafting, and serving both alcoholic and non-alcoholic beverages to guests in a courteous and efficient manner, adhering to the restaurant's standards. The Lead Mixologist will also ensure the bar area is well-stocked, organized, and clean, while possessing comprehensive knowledge of the beverage program.
Key Responsibilities:
- Exhibit thorough knowledge of and comply with all departmental policies, service procedures, and standards.
- Ensure proper maintenance and usage of bar equipment, utilizing it solely for its intended purpose.
- Maintain positive guest relations consistently, addressing and resolving guest complaints to ensure satisfaction.
- Supervise the opening and closing procedures of the bar, providing guidance to the bar team as necessary.
- Communicate effectively with guests and staff in a confident and professional manner.
- Monitor and uphold cleanliness, sanitation, and organization of all assigned work areas, including the Main Bar, Dispense Bar, and Liquor Room.
- Lead and manage the bar team, clearly defining responsibilities and duties for each shift.
- Adhere to state liquor regulations, particularly those concerning service to minors and intoxicated individuals.
- Possess complete knowledge of the Point of Sale system and manual processes.
- Ensure all relevant checklists are completed and standard operating procedures are followed, collaborating with management to update them as needed.
- Serve beverages to guests, ensuring accuracy and timely delivery.
- Anticipate and communicate replenishment needs promptly to avoid shortages during service.
- Announce last call at the designated closing time to guests and servers.
- Process guest checks and payments, adhering to cash handling and credit policies.
- Maximize the use of supplies to achieve budgeted beverage costs and minimize waste.
- Complete closing duties, including nightly handover reports and accurate wastage records.
- Finalize all closing reports in the Point of Sale system, secure cash, and complete designated cashier reports.
- Be prepared to work a flexible schedule, including early mornings, evenings, nights, and weekends.
- Maintain a polished appearance, being attentive and proactive in responding to the needs of guests and management.
- Support the beverage team in developing an efficient department, focusing on employee welfare, safety, and growth.
- Assist in training staff to ensure they possess the necessary skills for optimal performance.
- Supervise the bar team to ensure service standards and hospitality expectations are met.
- Facilitate regular departmental meetings to communicate standards and expectations.
- Monitor equipment standards and supply levels, informing management of any needs.
- Ensure the bar manager's closing responsibilities are fulfilled in their absence.
- Manage bar operations during service, including taking orders and issuing bills.
- Collaborate with the Bar Team and management on beverage research and development.
- Conduct weekly stock takes and stock reconciliation.
- Assist the Bar Manager with daily operations when required.
- Identify training needs and facilitate both practical and theoretical training.
- Support the induction and mentoring process, ensuring completion of skills training.
- Assist in staff training and liaise with senior management to develop key team members.
- Guide and support staff during service to enhance service quality and teamwork.
- Take corrective action when necessary, in collaboration with other managers.
- Organize and conduct regular beverage training sessions for front-of-house staff.
- Oversee the induction process for new staff, ensuring comprehensive training.
- Coach new bartenders and bar backs during their initial training week.
- Lead by example to foster high morale and motivation within the team.
- Report any grievances from guests or staff to the line manager.
- Ensure a safe working environment by identifying hazards and implementing corrective measures.
- Stay informed about health and safety audit reports and necessary actions.
- Identify required maintenance activities to uphold standards.
- Ability to lift, move, or push items weighing up to 25 pounds.
- Ability to navigate uneven terrain and confined spaces safely.
- Ability to respond to dangerous situations effectively.
- Requires mobility and sensory capabilities, including smell, taste, touch, and sound.
