RESPONSIBILITIES:
The Culinary Sous-Chef is fully responsible for assisting in menu creation, development and execution. This position reports directly to the Corporate Chef and will operate as the right-hand chef in the culinary leadership team.
- Assist in sourcing, costing and producing sustainable products to execute new menu items. (MarketMan)
- Assist in the development, training and execution of new menu items company wide.
- Ensure all food preparation and cooking is of the highest quality taste, presentation and utilizes HACCP guidelines and procedures
- Assume accountability for maintenance, safety and sanitation of all areas of responsibility
- Ensuring that standard recipes are being followed at all times and updated based on markets and executive direction.
- Implement Rational and Merry Chef cooking programs for new menu items,
- Resolving any problems that arise in the kitchen and seizing control of a situation at a moment’s notice.
- Provides training programs to ensure consistent, high-quality food at the facility
- Proper communication with new menu updates that correspond with nutritional Facts.
REQUIREMENTS:
- Degree in Culinary Arts is preferred or equivalent professional experience
- Min. 5 years management experience as a Restaurant Chef or Sous Chef.
- Strong communication skills and the ability to work with the executive team and employees under supervision.
- Self-starter, innovative and ability to multitask
- Maintains a positive attitude under pressure and motivates the team.
- Food Safety/Manager Certification
