The Breakfast Manager will report directly to the Assistant Director of Food & Beverage. The functional positions of Assistant F&B Managers, Servers, Bussers, Host/ess, Order takers and MIT's (within the highlighted departments) will report to the Breakfast Manager.

Duties and Supporting Responsibilities

  • Assists in the establishment and achievement of predetermined profit and productivity objectives and desired standards in food, service, sanitation, creativity, and merchandising and promotion ideas.
  • Review prices, sources of supply, food and beverage sales trends, and inventories. Monitor and control food; beverage; labour, and other related costs. Establish purchasing or receiving procedures in conjunction with the Purchasing Agent.
  • Develop and update menus, as appropriate, for breakfast
  • Revise standards and procedures for the departments, as necessary.
  • Conduct competitors' analysis to identify trends and opportunities
  • Manage scheduling, recruitment and interviewing of new colleagues
  • Manage proper staffing levels.
  • Manage proper supplies levels.
  • Manage colleagues training and development plan.
  • Conduct monthly departmental meetings.
  • Conduct daily communication meetings with staff prior to shift to communicate relevant daily information.
  • Manage the maintenance and cleanliness of the dining room and each department BOH area at all the times
  • Ensure Breakfast and Lunch service procedures are delivered according to MOHG standards.
  • Actively interact with guests during or after their meal, to ensure satisfaction.
  • Manage, coach, and counsel colleagues, including disciplinary procedures.
  • Uphold and enforce all hotel policies and procedures as stated in hotel colleague handbook.
  • Prepare floor plan according to reservations.
  • Develop a good atmosphere for colleagues and guests
  • Coordinate all aspects of service as assigned by self to include but not limited to:
  • Food and beverage requirements
  • Timing of events
  • Special attention guests
  • Table setup
  • Special meal requests
  • Billing instructions
  • Décor (to include floral) requirements

Additional duties include but are not limited to:

  • Assist in developing yearly budget for Breakfast
  • Develop monthly forecast for Breakfast
  • Monitor payroll of department for Breakfast
  • Review and approve departmental PAFs
  • Attend scheduled food and beverage and leadership meetings
