SUMMARY: This position will have a primary focus on performance cuisine. The ideal candidate will have a strong passion for the procurement of healthy ingredients that are geared towards nutrition, wellness and player performance. This candidate will work closely with the Executive Chef and Team Dietitian to deliver a nutrition program that optimizes player performance. This includes executing menus and providing team meals for the players and coaching staff, maintaining food, beverage and supplies within all team related lounges and dining spaces.  The job will consist of coordinating and executing all (Home) team meals for the Buffalo Sabres over the course of the season.  Candidate may be asked to provide additional food and beverage meals as needed and directed by the organization and VP of Hospitality. 

 

CORE RESPONSIBILITIES: 

  • Execute menus with inclusion of Executive chef and team nutritionist
  • Responsible for generating prep and order lists daily.
  • Responsible for maintaining work areas, coolers freezers, dry storage and clean and orderly fashion.
  • Assists with purchasing of all food and non-food products
  • Preparation of all meals
  • Food Safety and Sanitation compliance and tracking
  • Assist with maintenance of assets and equipment
  • Maintain P&L accountability
  • Special event planning execution
  • Team Meals as follows but not limited to:
    • Game Days –
      • Breakfast
      • Lunch
      • Snack
      • Dinner
      • Post-Game Dinner
    • Practice Days
      • Breakfast
      • Lunch
      • Snack
    • Off Season
      • As needed and directed by team
    • Special Events:
      • Prospects Development Camp
      • Training Camp
      • Misc – other special events

 

  • Other Duties as assigned

 

MINIMUM QUALIFICATIONS FOR THE POSITION:

  • 3+ years’ experience as a banquet, hotel or sports facility chef required.
  • Background in nutrition and wellness is preferred.
  • Knowledge of all Food and Beverage health & safety standards/regulations.

 

CRITICAL COMPETENCIES:

  • Flexibility to work evenings, weekends & holidays is essential.
  • Some travel possible.
  • Enthusiastic, imaginative and innovative.
  • Ability to work well with others
  • High level of organization and attention to detail

Compensation

This role pays $58,500 annualized.
