Executive Sous Chef

Menu Execution and Production
- Manages recipe standardization, ensuring correct portioning, and drives continuous improved based regular client and staff feedback.
- Creates the production schedule a week out from execution, constantly updating it for new menu items.
- Manages and schedules kitchen staff and the delivery driver.
- Trains staff on recipe execution.
- Ensures food safety practices are being followed.
- Conducts performance evaluations and prepares performance improvement and corrective action plans for all culinary team staff, when necessary.
Ordering
- Places orders for all food and non-food products and is the lead contact for our vendors.
- Works with site leads to manage inventory.
- Tracks orders in a shared spreadsheet by cost and shares with the management team.
- Creates a weekly report that tracks actuals vs. projected costs.
- Reconciles site-based invoices weekly and keeps tracks of credits etc.,
- Ensures distributors maintain necessary stock of specialty products for the menu cycles.
Effective Communication to Sites
- On a daily basis, effectively communicates food preparation and presentation instructions.
- In real-time communicates any last-minute menu changes or necessary smart substitutions.
Required Qualifications
- 5+ years of experience in a commissary kitchen setting with a love for food and people
- Able to multi-task with keen attention to detail
- Associate Culinary Degree accepted but Bachelor Degree strongly preferred.
- Mission-driven team player with a positive attitude, strong work ethic and the willingness to pitch in and support colleagues
- Experience with high volume production and catering experience is essential
- Previous experience managing cost controls
- Desire to learn and grow with a top notch foodservice company
- Ability to lead a team to best-in-class performance, while building consensus and affecting positive change
- School food and or contract food management is a plus
- Self-motivated, able to lead and be a proactive problem solver and make sound decisions on-the-fly
- Understanding of professional cooking & knife handling skills, local and seasonal ingredients and diverse cooking styles and cultures
- Excellent communication and interpersonal skills including written, phone, electronic and in-person.
- Must be able to stand for long periods of time
- Must be able to lift up to 50 lbs
- Basic computer skills (Microsoft Office, Google Docs, Dropbox, Slack etc.)
- Ability to work in a continuously changing environment that demands flexibility and good humor
