Key Responsibilities:- Oversee kitchen and commissary operations, maintaining a safe and sanitary work environment.
- Plan and manage menus, ensuring compliance with corporate guidelines and standards.
- Develop and execute catering events, utilizing standardized recipes and presentation standards.
- Train and develop kitchen staff in food preparation, safety, and sanitation procedures.
- Maintain inventory and manage food and non-food supplies, ensuring compliance with company guidelines.
- Make decisions regarding leftover food products, staying within company guidelines.
- Comply with federal, state, and local health and sanitation regulations, ensuring a clean and safe work environment.
- Participate in departmental meetings, staff development, and professional programs.
- 5+ years of progressive culinary/kitchen management experience.
- Corporate dining experience is highly preferred.
- Hands-on chefs experience is a must.
- Extensive high-volume catering experience is needed.
- High-volume, complex food service operations experience is highly desirable.
- Bilingual in Spanish is highly desirable.
- Institutional and batch cooking experiences are preferred.
- Comprehensive knowledge of food and catering trends, with a focus on quality, production, sanitation, food cost controls, and presentation.
- Must be experienced with computers, including Microsoft Office, Outlook, and the Internet.
- Must be willing to participate in client satisfaction programs/activities.
- ServSafe certified is highly desirable.
- A.S. or equivalent experience is required.
