Job Overview

Position Summary:
The Artisan Bread Specialist is responsible for a variety of baking tasks, focusing on the creation of high-quality breads, rolls, muffins, and other baked goods.


Key Responsibilities:

  • Prepare a range of baked items including breads, rolls, muffins, and pastries.
  • Analyze production schedules to determine the types and quantities of goods to be baked, and organize necessary supplies and equipment.
  • Receive and manage ingredients and supplies essential for daily baking operations.
  • Measure and shape dough into consistent portions, proof, and bake using appropriate techniques, ensuring quality control throughout the process.
  • Apply various toppings and finishes to specialty baked products.
  • Prepare fillings and accompaniments as needed.
  • Maintain cleanliness and organization of workspaces, tools, and equipment.
  • Address daily operational challenges related to equipment and supplies, ensuring quality standards are met.
  • Complete necessary production documentation and records.
  • Adapt baked goods for special dietary requirements when necessary.
  • Perform additional tasks as assigned.

Qualifications:

Education:
A High School Diploma is required; an Associate's Degree is preferred.


Experience:

  • At least 3 years of experience in a similar role.
  • A minimum of 1 year in fine dining food service.
  • Familiarity with specialty bread techniques, including proofing and starter usage.

Preferred Experience:
Previous experience in bread production is advantageous.


Skills and Abilities:

  • Understanding of inventory management and supply ordering.
  • Ability to uphold quality control standards.
  • Proficiency in preparing and baking a variety of pastries and baked goods.
  • Capability to compile data and generate reports.
  • Experience in receiving and managing goods.
  • Knowledge of culinary equipment maintenance and care.
  • Familiarity with food preparation and presentation standards.

Physical Requirements:
This position requires standing for extended periods, bending, kneeling, and lifting up to 40 pounds regularly, with occasional lifting of up to 50 pounds. Vision capabilities include close, color, and peripheral vision, essential for monitoring food quality.


Work Environment:
Work is primarily conducted in an indoor kitchen setting, with exposure to heat, steam, and cleaning chemicals. Safety measures must be observed while handling sharp tools and equipment.
