Job Overview

Position Summary:
The Artisan Bread Specialist is responsible for a range of baking tasks and plays a key role in the creation of various bread products, including rolls, muffins, cookies, and specialty items.


Key Responsibilities:

  • Prepare a variety of baked goods, including breads, rolls, muffins, and pastries.
  • Analyze production schedules to identify the types and quantities of products to be baked, ensuring all necessary supplies and equipment are ready for daily operations.
  • Receive and manage ingredients and supplies from the kitchen and pantry as needed.
  • Portion, shape, and proof dough, ensuring quality control throughout the baking process.
  • Apply various toppings to specialty baked items as required.
  • Prepare fillings, compotes, and other finishing touches for baked goods.
  • Maintain cleanliness and organization of work areas, tools, and equipment.
  • Address daily operational challenges related to equipment and supplies, ensuring the quality of food products.
  • Complete necessary production documentation and records.
  • Adapt baked goods for specific dietary needs when required.
  • Perform additional job-related tasks as assigned.

Qualifications:
To excel in this role, candidates must meet the following requirements:


  • Education: High School Diploma; Associate's Degree is preferred.
  • Experience:
    • At least 3 years of experience in a similar baking role.
    • Minimum of 1 year in a fine dining food service environment.
    • Familiarity with specialty bread production, including proofing techniques and starter usage.

Preferred Skills:

  • Previous experience in bread production is highly desirable.

Knowledge, Skills, and Abilities:

  • Understanding of inventory management and supply ordering.
  • Ability to uphold quality control standards.
  • Competence in preparing and baking a variety of pastries and baked goods.
  • Skill in data collection and report preparation.
  • Capability to receive, stock, and deliver goods effectively.
  • Knowledge of culinary equipment maintenance and care.
  • Familiarity with food preparation and presentation techniques.

Physical Requirements:
The role requires the ability to stand for extended periods, perform physical tasks such as lifting up to 40 pounds regularly and 50 pounds occasionally, and maintain visual acuity for quality monitoring.


Work Environment:
Work is typically conducted in an indoor kitchen setting, with exposure to heat, steam, and various kitchen equipment. Safety precautions must be observed when handling sharp tools and navigating potentially slippery surfaces.
