Job Title: Chef de Cuisine

At The Greenbrier Hotel, we are seeking a highly skilled and experienced Chef de Cuisine to join our culinary team. As a key member of our kitchen staff, you will be responsible for leading the production of all food items in our banquets and assigned areas.

Key Responsibilities:
  • Provide exceptional food experiences for our guests
  • Lead and direct the production of all food items in banquets and assigned areas
  • Assign and delegate work to ensure food production meets benchmarked standards
  • Oversee the production of all food and coordinate the execution of all food
  • Benchmark and improve food and food production standards in banquets
  • Develop seasonal dishes and menus, and implement processes and procedures for consistency
  • Ensure a Greenbrier experience for our guests
Secondary Responsibilities:
  • Organize, sanitize, and maintain all kitchen equipment and areas of responsibility
  • Develop, supervise, and implement safe, sanitary, and efficient work habits of all line personnel
  • Develop a positive work environment and team spirit
  • Develop and nurture the Apprenticeship program
  • Direct the Banquet Sous Chef to assist in production, organization, and execution of service, food quality, administrative, and daily responsibilities
  • Analyze issues and make decisions based on relevant information and facts
Requirements:
  • Minimum 5 years experience in food production in a high-volume operation
  • Experience in a broad range of different dining operations and independent restaurants
  • High School Diploma or G.E.D. or AOS or AS Degree in Culinary Arts plus 3 years experience
  • Computer Literate (basic understanding of Excel and Word programs)
  • West Virginia Food Handler's Permit
  • Ability to work quickly and efficiently in a fast-paced environment
  • Excellent Work Ethic
  • Good Time Management and Organizational Skills
  • Must be able to lead a highly motivated team
  • Must be able to read and follow menus and recipes
  • Have an eye for product control and quality of food
  • Proficient in all aspects of the pastry culinary arts
  • Must be innovative and creative
Working Conditions:
  • Shifts as required (evenings and/or days)
