Nutritional Services Cook

Objective of the Position:
The primary objective of this role is to prepare meals in compliance with current federal, state, and local regulations, alongside our established policies and procedures. You will work under the guidance of the Dietitian and/or Dietary Services Supervisor to ensure that high-quality food service is consistently delivered. As a Cook, you will be entrusted with the administrative authority, responsibility, and accountability necessary for fulfilling your assigned tasks.

Administrative Duties:
- Review menus prior to food preparation.
- Coordinate dietary services with other departments as needed.
- Ensure adherence to dietary procedures in line with established policies.
- Maintain and file menus according to established protocols.
- Process and communicate dietary changes and new diets in the absence of the Dietary Services Supervisor.
- Regularly record food and equipment temperatures as per policy.
- Oversee meal service when the supervisor is unavailable.
- Perform additional duties as necessary or directed.
- Participate in and implement recommendations from various committees as needed.
- Engage with dietary staff to identify and resolve service issues.
- Foster positive working relationships with dietary and facility staff and residents.
- Uphold resident rights at all times.
- Ensure compliance with dietary policies among staff, residents, and visitors.
- Create a warm and welcoming atmosphere within the department.
- Actively participate as a team player in the dietary department.
- Delegate responsibilities to other qualified personnel.
- Assist in establishing efficient food service production lines.
- Report attendance issues to the Dietary Services Supervisor.
- Document all occupational exposures to hazardous materials.
- Attend meetings and training sessions as required.
- Prepare appealing and nutritious meals according to planned menus.
- Cook food for therapeutic and modified texture diets in accordance with established portion control.
- Assist in preparing and serving nutritional snacks as needed.
- Ensure that meal trays are equipped with appropriate utensils and equipment.
- Provide alternative food choices for residents who refuse standard menu items.
- Perform duties in compliance with regulations and established policies.
- Adhere to Infection Control and Universal Precautions protocols.
- Conduct scheduled cleaning duties as per established guidelines.
- Report hazardous conditions to your supervisor immediately.
- Document all incidents on the shift they occur.
- Maintain cleanliness in food storage areas.
- Ensure proper disposal of refuse.
- Ensure dietary staff wear protective gear when handling hazardous materials.
- Report any missing or unclear labels or safety data sheets.
- Maintain fire safety protocols as per departmental policies.
- Practice proper personal hygiene and cleanliness at all times.
- Implement the FIFO method (First In, First Out) for food items.
- Receive orders to verify quantities and specifications.
- Maintain adequate stock levels of food and supplies.
- Assist in inventorying and storing incoming supplies.
- Ensure proper labeling and storage of hazardous materials.
- Work in well-ventilated and adequately lit areas.
- Engage in intermittent movement throughout the workday.
- Handle frequent interruptions and engage with residents and staff.
- Communicate effectively with medical and nursing staff.
- Be available for additional shifts as needed.
- Participate in ongoing educational programs.
- Be aware of potential hazards in the kitchen environment.
- Maintain good communication with other departments for effective service delivery.
One year of dietary experience in a supervisory role in a healthcare setting is preferred, along with one year of cooking experience.
Specific Qualifications:
- Ability to follow written and verbal instructions.
- Experience in cooking a variety of foods in large quantities.
- Proficiency in reading, writing, and understanding English.
- Effective communication skills with residents.
- Ability to make independent decisions when necessary.
- Knowledge of dietary practices and procedures.
- Commitment to maintaining hygiene and safety standards.
- Ability to move throughout the workday.
- Capability to manage the mental and emotional demands of the position.
- Ability to see and hear adequately to perform job functions.
- Meet health requirements set by facility policies.
- Ability to lift and move items weighing up to 40 pounds.
- May assist in resident evacuation during emergencies.
