Department: Dietary Services

Objective of Your Role:

The primary aim of your role is to prepare meals in compliance with applicable federal, state, and local regulations, alongside our established policies and procedures. You will work under the guidance of the Dietitian and/or Dietary Services Supervisor to ensure that high-quality food service is consistently delivered. As a Cook, you are entrusted with the administrative authority, responsibility, and accountability necessary for fulfilling your assigned tasks.

Key Responsibilities:

Administrative Duties:
  • Review menus prior to food preparation.
  • Coordinate dietary services with other departments as required.
  • Ensure adherence to dietary procedures in line with established policies.
  • Maintain and file menus according to established protocols.
  • Process and communicate dietary changes and new diets in the absence of the Dietary Services Supervisor.
  • Regularly record food and equipment temperatures as per policy.
  • Oversee meal service in the absence of supervisory staff.
  • Perform additional duties as deemed necessary or as directed.
  • Engage in and implement recommendations from various committees as necessary.
Personnel Management:
  • Meet with dietary staff to identify and rectify service issues.
  • Foster positive working relationships with dietary and facility staff as well as residents.
  • Uphold resident rights at all times.
  • Ensure compliance with established dietary policies by all personnel.
  • Create a warm and inviting atmosphere within the department.
  • Actively participate as a team player within the dietary department.
  • Delegate responsibilities to other qualified personnel.
  • Assist in organizing food service production lines to ensure timely meal preparation.
  • Report attendance issues to the Dietary Services Supervisor.
  • Document any occupational exposures to hazardous materials.
  • Attend meetings and training sessions as required.
Dietary Services:
  • Prepare appetizing meals in accordance with planned menus and temperature guidelines.
  • Prepare food for specialized diets as per established portion control standards.
  • Assist in providing nutritional snacks and supplements as needed.
  • Ensure that appropriate utensils and equipment are included with resident meal trays.
  • Offer alternative food choices to residents who decline the standard menu items.
Health and Safety:
  • Perform duties in compliance with regulations and established policies.
  • Adhere to Infection Control and Universal Precautions protocols.
  • Complete scheduled cleaning tasks as per established guidelines.
  • Report hazardous conditions or equipment to your supervisor immediately.
  • Document all incidents and accidents on the shift they occur.
  • Maintain cleanliness and organization in food storage areas.
  • Ensure proper disposal of refuse.
  • Ensure dietary staff wear protective gear when handling hazardous materials.
  • Report any missing or unclear labels to your supervisor.
  • Maintain fire safety protocols as per departmental policies.
  • Practice good personal hygiene and cleanliness at all times.
Inventory Management:
  • Implement the FIFO method (First In, First Out) for food items and supplies.
  • Receive and verify orders for compliance with health requirements.
Equipment and Supply Management:
  • Ensure adequate stock levels of food and supplies at all times.
  • Assist in the inventory and storage of incoming supplies.
  • Ensure proper labeling and storage of hazardous materials.
Working Environment:
  • Work in well-ventilated and adequately lit areas.
  • Engage in intermittent movement throughout the workday.
  • Handle frequent interruptions and engage with residents and staff.
  • Communicate effectively with medical and nursing staff.
  • Be prepared to work beyond normal hours when necessary.
  • Participate in ongoing educational programs.
  • Be aware of potential hazards such as falls and burns.
  • Maintain effective communication with other departments for service planning.
Qualifications:

Preferred: One (1) year of supervisory dietary experience in a healthcare setting. Required: One (1) year of cooking experience.

Specific Requirements:

  • Capability to prepare a variety of foods in large quantities.
  • Proficiency in reading, writing, and understanding English.
  • Effective communication skills with residents regarding their preferences.
