We are seeking a highly skilled and experienced Culinary Sous-Chef to join our team at Pura Vida Miami. As a key member of our culinary leadership team, you will be responsible for assisting in menu creation, development, and execution.

Key Responsibilities
  • Menu Development: Assist in sourcing, costing, and producing sustainable products to execute new menu items.
  • Training and Execution: Assist in the development, training, and execution of new menu items company-wide.
  • Quality Control: Ensure all food preparation and cooking is of the highest quality, taste, presentation, and adheres to HACCP guidelines and procedures.
  • Maintenance and Safety: Assume accountability for maintenance, safety, and sanitation of all areas of responsibility.
  • Recipe Management: Ensure that standard recipes are being followed at all times and updated based on markets and executive direction.
  • Cooking Programs: Implement Rational and Merry Chef cooking programs for new menu items.
  • Problem-Solving: Resolve any problems that arise in the kitchen and seize control of a situation at a moment's notice.
  • Training and Communication: Provide training programs to ensure consistent, high-quality food at the facility and proper communication with new menu updates that correspond with nutritional facts.
Requirements
  • Education: Degree in Culinary Arts or equivalent professional experience.
  • Experience: Min. 5 years management experience as a Restaurant Chef or Sous Chef.
  • Communication Skills: Strong communication skills and the ability to work with the executive team and employees under supervision.
  • Leadership Skills: Self-starter, innovative, and ability to multitask.
  • Attitude: Maintains a positive attitude under pressure and motivates the team.
  • Certification: Food Safety/Manager Certification.
