Position Summary:

The Executive Sous Chef is an essential leader within our kitchen brigade, tasked with managing culinary operations, ensuring the highest standards of food quality, and upholding rigorous hygiene and safety protocols. This position supports the Executive Chef in orchestrating daily kitchen functions, including menu development, inventory oversight, staff management, and training initiatives.

Key Responsibilities:

  • Oversee staffing levels across all kitchen outlets to ensure optimal operational efficiency.
  • Act as the Executive Chef's representative in their absence.
  • Implement and enforce departmental policies and procedures.
  • Ensure smooth and cost-effective food production operations, including labor management and inventory control.
  • Manage kitchen opening and closing procedures.
  • Supervise food handlers in the preparation of all culinary offerings.
  • Approve and manage orders for raw ingredients, ensuring proper storage and handling.
  • Guarantee adherence to standardized recipes and presentation guidelines.
  • Assist food handlers in their duties to meet service standards.
  • Monitor food preparation and storage practices to comply with sanitation regulations.
  • Conduct regular inspections of kitchen equipment to maintain cleanliness and functionality.
  • Report maintenance needs to the engineering team.
  • Engage in the recruitment, training, and performance evaluation of kitchen staff.
  • Analyze daily payroll and labor costs, adjusting staffing as necessary.
  • Participate in hotel meetings to stay informed about operations and events.
  • Communicate effectively with team members regarding daily activities and upcoming events.
  • Evaluate team performance and identify areas for development.
  • Conduct team meetings to share important information and updates.
  • Perform additional duties as assigned.
