Key Responsibilities:

  • Oversee the production of pastries and desserts, ensuring that all products meet the highest standards of quality and presentation.
  • Manage a team of pastry chefs, providing guidance and support to ensure that they are able to perform their duties to the highest standard.
  • Monitor wastage and complete assigned tasks within the given time to meet strict deadlines.
  • Demonstrate creative baking techniques, including prepping, melting, measuring, tempering, baking, whipping, icing, layering, juicing, and decorating.
  • Review menu specifications and ensure that all pastry team members are following the guidelines.
  • Maintain food cost levels through purchasing and wastage control.
  • Motivate, train, and develop pastry team members' skills.
  • Comply with all food safety and hygiene regulations as stated in the food safety management system handbook.
  • Report problems with the food safety management system to their manager and the hygiene and food safety team.

Requirements:

  • Minimum of 3 years of experience in Pastry/Bakery, preferably with large production volume managing a team of at least 15 members.
  • Full knowledge of baking ingredients, measuring techniques, mixing methods, kitchen equipment, and baking times.
  • Certificate in culinary arts, pastry-making, baking, or relevant field.
  • Excellent organizational skills and the ability to prioritize tasks.
  • Hands-on approach and ability to react with a sense of urgency.
  • Position requires the ability to move, lift, carry, pull, or push as needed.
  • Flexibility (different shifts - night, weekends, holidays).
  • Be a leader within your team and a team player.
