Position Overview

The Senior Culinary Supervisor plays a crucial role in ensuring the efficient operation of the Prepared Foods kitchen during designated shifts. This position is responsible for managing the opening and closing of the department as per the schedule. Key responsibilities include supporting kitchen personnel, overseeing the execution of daily production tasks, addressing equipment and product quality concerns, resolving customer inquiries and complaints, and performing the duties of a production cook as necessary. The Senior Culinary Supervisor is vital to the kitchen team, providing immediate leadership in accordance with departmental standards and leveraging on-shift experiences to suggest enhancements in operational processes.

Key Responsibilities

Oversee Kitchen Operations

  • Provide real-time supervision and assistance to kitchen staff, ensuring adherence to customer service and operational protocols.
  • Identify and resolve equipment and product quality issues by following standard operating procedures and escalating when necessary.
  • Address customer inquiries and complaints in alignment with the organization's standards for service excellence and staff treatment.
  • Ensure compliance with food safety regulations by all team members throughout the shift.
Manage Department Opening and Closing
  • Adhere to departmental and organizational protocols to secure the premises, including conducting opening and closing inspections and communicating any staffing, equipment, or supply concerns.
  • Develop production schedules and outline workflow for the shift, effectively communicating requirements to team members and making adjustments as needed.
  • Complete essential opening and closing tasks, including cleaning, sanitation, and temperature checks, in a timely manner.
Perform Production Cook Duties
  • Demonstrate recipe execution and adherence to departmental standards in food preparation.
  • Exemplify safe work practices.
  • Balance supervisory responsibilities with hands-on cooking tasks.
Train Kitchen Staff
  • Provide training to new and developing team members on proper techniques and behaviors.
  • Update departmental standard operating procedures and training materials as directed by management.
  • Utilize on-the-job experiences to recommend updates or modifications to departmental processes.
  • Model effective communication practices to address concerns and resolve issues.

Qualifications

Preferred:
  • Proficient knife skills, including the ability to perform specific cuts.
  • Experience with basic kitchen equipment maintenance.
  • Leadership experience in a commercial kitchen setting.
  • Demonstrated customer service skills.
  • Training in food safety and kitchen sanitation.
Minimum:
  • Basic math skills (addition, subtraction, multiplication, division).
  • Strong command of spoken and written English.
  • Effective communication skills and ability to work collaboratively.
  • Ability to function effectively as part of a team.
  • Knowledge of basic kitchen safety and the ability to instruct others.
  • Time management skills to prioritize tasks effectively.
  • Experience in a commercial kitchen environment.

Physical Demands:

While performing the duties of this position, the employee is regularly required to communicate verbally and audibly. The employee frequently needs to sit, stand, walk, and use hands for handling and fine manipulation. The employee may need to reach with hands and arms, climb, balance, bend, stoop, kneel, crouch, or crawl. The employee must frequently lift and/or move up to 25 pounds and occasionally lift and/or move up to 50 pounds. This position requires work in a kitchen environment, involving the use of knives, cleaning chemicals, and exposure to varying temperatures. Specific vision abilities required include close vision, color vision, and the ability to adjust focus. The noise level in the work environment is typically moderate, and the employee must maintain focus amidst multiple demands for attention.
