Sous Chef Job Description

A key position in the kitchen, the Sous Chef plays a crucial role in ensuring the smooth operation of our culinary team. Reporting directly to the Chef de Cuisine or Executive Chef, the Sous Chef is responsible for overseeing the line cooks and stewards, and is expected to be proficient in every station and facet of the kitchen.

Key Responsibilities:

  • Owns the service period and crew, ensuring seamless execution of menu items and exceptional customer service.
  • Provides guidance and support to line staff, delegating tasks and responsibilities as needed.
  • Stays up-to-date on menu changes, relaying important information to line staff and ensuring that all stations are prepared for service.
  • Coordinates with the Chef de Cuisine on supervising the Stewarding department, ensuring that all side work is completed and that the kitchen is maintained in a clean and organized state.
  • Orders daily and weekly products in conjunction with the Chef de Cuisine, ensuring that all necessary ingredients are on hand.
  • Monitors food and labor costs, making efforts to control these in their particular service periods.
  • Collaborates with the Chef de Cuisine and/or Executive Chef on menu development and engineering, ensuring that all menu items meet the highest standards of quality and presentation.

Qualifications:

  • Minimum of two years experience in a fine dining restaurant environment.
  • Understanding of professional cooking and knife handling skills.
  • Knowledge of safety, sanitation, and food handling processes.
  • Able to work flexible hours, including nights and weekends.
  • Responsible, dependable, and punctual.
  • Excellent communication skills, with the ability to speak, read, and understand English.
  • Clean and professional appearance.
  • Demonstrates enthusiasm for all things AccorHotel.
  • Must pass a background check.
