About the Role

Twin Farms is seeking a highly skilled and experienced Sous Chef to join our culinary team. As a key member of our leadership team, you will play a vital role in ensuring the highest standards of quality and excellence in our kitchen operations.

Key Responsibilities
  • Leadership and Management
    • Assist the Executive Chef in overall kitchen management, including menu execution, quality standards, and team support.
    • Develop and implement supervisory responsibilities, particularly in performance management and motivation.
  • Labor Management
    • Manage labor resources through staff scheduling, payroll verification, employee evaluation, hiring, and termination.
  • Training and Development
    • Train and coach staff to build up the collective knowledge, skills, and abilities of the kitchen team.
  • Operations and Logistics
    • Assume the role of Manager On Duty in the absence of the Executive Chef, overseeing kitchen staff and production.
    • Monitor food production, ordering, inventory, cost, quality, and consistency.
    • Plan, coordinate, and implement culinary offerings for special events and holiday functions.
  • Collaboration and Communication
    • Act as a liaison between the kitchen and other hotel departments, demonstrating excellent teamwork and collaboration.
  • Safety and Quality
    • Ensure staff adherence to department safety procedures and policies, including sanitation and equipment maintenance.
Requirements
  • Culinary Education and Experience
    • Culinary education and/or on-the-job training with hotel and fine dining experience preferred.
    • Previous experience cooking in a fine dining restaurant.
  • Working Conditions
    • Ability to work in a fast-paced environment with changing demands.
    • Predominant activity is on feet with continuous walking and standing.
    • Frequent reaching, bending, and lifting of light loads with occasional lifting extremes up to approximately 50lbs.
    • Shift hours are typically long with weekend and holiday attendance necessary.
