At AccorHotel, we are seeking a highly skilled and experienced Pastry Sous Chef to join our team at Fairmont Austin. As a key member of our culinary team, you will be responsible for leading the pastry department and ensuring the highest level of quality and productivity in our kitchen.

Key Responsibilities:
  • Lead and supervise the pastry team to ensure efficient execution of service and high-quality production.
  • Develop and implement new dessert, pastry, and bread products to enhance our menu offerings.
  • Collaborate with the Executive Pastry Chef and Assistant Pastry Chef to ensure seamless operation and effective communication.
  • Monitor and maintain proper rotation of product in all chillers to minimize wastage and spoilage.
  • Ensure all kitchen colleagues are aware of standards and expectations, and communicate EcoSure and Servesafe standards to ensure compliance.
Requirements:
  • Minimum 3 years leadership experience in a luxury, high-volume hotel.
  • Strong knowledge of sugar work and chocolate skills.
  • Computer literate in Microsoft Windows applications.
  • Strong interpersonal and problem-solving abilities.
  • Ability to work well under pressure in a fast-paced environment.
