Maintain Kitchen and Equipment to the Highest Standards:
- Ensure staff are trained to operate, maintain, clean, and inspect all kitchen equipment, including deep fryers, stoves, food processors, mixers, slicers, and wood-fired pizza ovens.
Menu Innovation:
- Keep the menu exciting and appealing by staying updated with food trends, leading to regular menu updates and the creation of daily or seasonal specials.
- Uphold high standards for all food leaving the kitchen, with established accountability systems.
- Maintain an overall food cost of 18%, with the ability to accurately report on each menu item.
- Ensure new menu items are costed prior to their introduction.
Project Management:
- Ensure all products are purchased, received, and stored according to company standards.
- Develop the back-of-house schedule and maintain a weekly labor cost of 20% for the entire back-of-house, collaborating with management and utilizing relevant tools.
- Complete daily and weekly orders, as well as quarterly inventory.
- Oversee the execution of the preparation list and ensure line opening and closing standards are met.
- Ensure recipes and all back-of-house instructional documents are created and maintained in both digital and printed formats for easy reference.
- Quality, consistency, and speed are expected and taught as core values.
