The Culinary Operations Supervisor plays a pivotal role in the kitchen, reporting directly to the Chef De Cuisine and the Executive Sous Chef. Key Responsibilities

  • Assist in the creation and refinement of menus and culinary specifications.
  • Adhere to all operational policies and guidelines established by the Executive Chef.
  • Oversee and coordinate all cleaning schedules and maintenance tasks within the kitchen.
  • Ensure compliance with food purchasing standards and recipe accuracy.
  • Monitor and manage food and labor expenditures effectively.
  • Maintain exceptional food quality and presentation standards.
  • Plan and supervise all culinary activities and food preparation processes.
  • Estimate food requirements based on budgetary constraints for food and labor costs.
  • Lead and mentor kitchen staff, fostering a collaborative team environment.
  • Identify and report any equipment malfunctions or maintenance needs.
  • Recruit, train, and manage kitchen personnel.
  • Address and resolve any issues or complaints that arise in the kitchen.
  • Perform necessary administrative tasks related to kitchen operations.
  • Ensure compliance with health, safety, and sanitation regulations.
  • Maintain accurate time and payroll records for kitchen staff.
  • Promote a positive and professional atmosphere among colleagues and guests.

Qualifications

  • A minimum of 5 years of culinary experience is required.
  • At least 1 year of experience in a supervisory role within a similar environment.
  • Proven ability to thrive in a fast-paced, high-volume kitchen setting.
  • Physical capability to perform various kitchen tasks, including lifting up to 50 pounds.
  • Demonstrated success in upscale hotels or reputable independent restaurants.
