About the Role

We are seeking an experienced Sous Chef to join our culinary team at the Inn at Virginia Tech and Skelton Conference Center. As a key member of our team, you will assist in the planning, direction, coordination, and execution of all culinary operations.

Key Responsibilities
  • Maintain a hands-on approach to all culinary operations, ensuring high-quality food preparation and presentation.
  • Work collaboratively with the food and beverage team to develop and execute menus, ensuring alignment with hotel standards.
  • Train and develop culinary staff to ensure they meet hotel standards and can perform their duties effectively.
  • Assist in calculating accurate food costs, coordinating with accounting to ensure compliance.
  • Provide guidance and instruction to cooking personnel on fine points of cooking, ensuring consistency and quality.
  • Cook and carve meats, prepare sauces, and assist with banquets and social functions as needed.
  • Taste and evaluate all food items to ensure quality and presentation meet hotel standards.
  • Estimate production needs, communicate with kitchen associates, and schedule food deliveries as necessary.
  • Monitor compliance with health and fire regulations, maintaining a safe and clean kitchen environment.
  • Keep records required by government agencies, ensuring compliance with regulations.
  • Assist in establishing standards for personnel performance and customer service, ensuring a positive guest experience.
  • Review work procedures and operational problems to identify areas for improvement.
  • Organize and direct worker training programs, resolve personnel issues, and evaluate employee performance.
  • Record and analyze sales data to determine unpopular or less profitable items, making recommendations for improvement.
  • Arrange for equipment maintenance and repairs, coordinating services such as waste removal and pest control.
  • Train workers in food preparation, service, sanitation, and safety procedures, ensuring compliance with hotel standards.
  • Coordinate with the Front Office for VIP lists, fruit and cheese orders, forecast room sales, and group information.
  • Work with Catering, Conference Services, and Banquet Departments to ensure smooth execution of catering procedures, BEOs, and weekly forecast meetings.
Requirements

We are looking for a candidate with a Bachelor's degree in a related field or equivalent experience. A minimum of two years of related experience is required, with a strong background in culinary operations, menu planning, and staff development. Computer skills, including Microsoft Office and hotel systems such as MICROS, are essential. Knowledge of restaurant and culinary operations within a hotel environment, including laws and regulations, is also required.
