Job Summary

The Junior Sous Chef plays a pivotal role in ensuring the preparation and presentation of high-quality food, adhering to strict sanitation, health, and personal hygiene standards. This position requires a strong understanding of food production programs and procedures, as well as the ability to effectively manage kitchen operations and lead a team of cooks.

Key Responsibilities
  • Provide clear guidance and direction to team members, ensuring seamless kitchen operations.
  • Organize and delegate work assignments to meet deadlines, promoting efficiency and productivity.
  • Train lower-level cooks in proper equipment usage, enhancing their skills and knowledge.
  • Communicate regularly with kitchen staff, including Prep Cooks, Cooks I, Cook II, Lead Cooks, Chef de Cuisine, and Executive Chef.
  • Prepare all food items according to standard recipes and menu specifications, ensuring consistency and quality.
  • Exhibit expertise in various cooking techniques, knife skills, and knowledge of different knife cuts.
  • Ability to work with delicate equipment, requiring fine finger dexterity and attention to detail.
  • Prepare and present compound sauces and derivatives of mother sauces, showcasing culinary expertise.
  • Actively participate in kitchen operations, including cooking, preparing, and assembling food.
  • Operate kitchen equipment, including slicer, steamer, deep fryer, ovens, broiler, grill, mixer, kettle, and flat top.
  • Maintain a thorough understanding of all food products, ensuring accurate preparation and presentation.
  • Prepare daily prep lists and delegate tasks to team members, promoting efficiency and productivity.
  • Prepare and place orders for recipe preparations, ensuring timely delivery of ingredients.
  • Prepare written food requisitions for supplies and food items, maintaining accurate records.
  • Recite recipes from memory, demonstrating expertise and attention to detail.
  • Develop daily specials and new dishes for presentation to the Chefs, showcasing creativity and culinary expertise.
  • Perform assigned sidework, including replenishing and restocking workstations with supplies.
  • Adhere to control procedures for food costs and quality, ensuring optimal kitchen operations.
  • Rotate products on a first-in, first-out basis, maintaining accurate inventory and ensuring safekeeping and sanitation.
  • Check stations before, during, and after shifts for proper setup and cleanliness, promoting a safe and healthy work environment.
  • Abide by all health codes and hand-washing guidelines, setting a positive example for team members.
  • Fully observe all safety procedures, ensuring a safe and healthy work environment.
  • Strive for picture-perfect plate presentation, showcasing culinary expertise and attention to detail.
Requirements
  • 6 years of experience in food preparation and food knowledge.
  • Ability to demonstrate advanced knife skills and knowledge of different knife cuts.
  • Working knowledge of weights, measures, and various cooking techniques.
  • Reading and math skills for recipes and measurement.
  • Knowledge of MSDS program.
  • Ability to stand on a hard surface for long periods of time.
  • Ability to tolerate areas with extreme hot and cold temperatures.
  • Must possess effective communication and organizational skills.
  • Ability to apply common sense understanding to carry out a variety of instructions furnished in written, oral, or diagram form.
  • Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.
  • Must be able to successfully pass applicable auditions or skill testing.
