Job Description

A culinary leader is sought to join the team at Commodore Perry Estate, a luxurious hotel and residential estate in Austin. The successful candidate will work closely with the Executive Chef to deliver exceptional dining experiences, inspiring the culinary team with creative flair and leadership skills.

Key Responsibilities
  • Assist the Executive Chef in the day-to-day operations of the kitchen, ensuring the highest standards of quality and innovation in every dish served.
  • Develop recipes and create menus for all amenities, weddings, and larger events, showcasing the estate's culinary expertise.
  • Support the Executive Chef in leading the kitchen team, focusing on food preparation, production, and control for all meal periods and events.
  • Prepare and assist the kitchen team for all meal periods and events, ensuring exceptional quality and presentation of all food items.
  • Support the Executive Chef in training and developing the team in their culinary skills, promoting a culture of excellence and innovation.
  • Assist the Executive Chef in controlling labor and operating expenses, ensuring effective planning, budgeting, and purchasing decisions.
  • Identify product needs and requisition items needed to prepare the menus, maintaining a high level of inventory control and cost management.
  • Notify the Executive Chef in advance of any expected shortages and address purchase orders when required, ensuring seamless operations.
  • Conduct and participate in pre-meal and weekly F&B meetings, staying informed and up-to-date on hotel and restaurant bookings, guest notes, and preferences.
  • Ensure that sanitation standards as set forth by local, state & federal Health Department regulations are in compliance, maintaining a clean and organized kitchen and its equipment.
Qualifications
  • Culinary Certificate or Degree Preferred.
  • Minimum of two years experience in a Chef de Cuisine or Sous Chef role.
  • Ability to work a flexible schedule, including weekends and holidays, according to department needs.
  • Experience at a luxury hospitality property.
