Culinary Operations Supervisor

The role of the CULINARY OPERATIONS SUPERVISOR is to oversee and engage in the daily functions of the kitchen, particularly in relation to the Bistro Kitchen and the catering services for banquet events within the hotel's food and beverage operations. Responsibilities include the preparation, seasoning, and cooking of various dishes, managing supply orders, and maintaining accurate records.
KEY RESPONSIBILITIES:
Ensure the quality of both raw and prepared food items meets established standards.
* Enforce sanitation protocols to guarantee compliance among staff.
* Assess the quantity and quality of incoming products.
* Manage the ordering or requisitioning of food and supplies to maintain operational efficiency.
* Supervise and coordinate the activities of kitchen staff involved in food preparation and maintenance.
* Inspect supplies, equipment, and work areas to ensure adherence to set standards.
* Determine presentation methods for food and create appealing displays.
* Train kitchen staff in food preparation, cooking techniques, garnishing, and presentation.
* Estimate the necessary amounts and costs of supplies, including food and ingredients.
* Collaborate with team members to plan and develop recipes or menus, considering seasonal ingredient availability and anticipated customer volume.
* Maintain consistent attendance and punctuality.
* Uphold high standards of personal appearance and grooming, adhering to the dress code.
* Perform additional duties as assigned by management.

EDUCATION AND EXPERIENCE:
Completion of a college or university program certificate; or two to four years of relevant experience and/or training; or a combination of education and experience.
QUALIFICATIONS:
Proficiency in basic computer functions, including MS Office, Outlook, Word, and Excel.
SUPERVISORY ROLE:
This position includes supervisory responsibilities.
WORK ENVIRONMENT:
The work environment typically involves:
* A kitchen setting with high temperatures.
* Regular exposure to cleaning chemicals.
* Moderate noise levels consistent with kitchen operations.
PHYSICAL REQUIREMENTS:
During the performance of this role, associates are expected to adhere to safety and security protocols, promoting a safe work environment.
The physical demands of this position include:
* Standing for over 90% of the time.
* Walking for more than 50% of the time.
* Using hands for handling or feeling for over 90% of the time.
* Lifting up to 50 lbs more than one-third of the time.
* Pushing or pulling up to 50 lbs more than one-third of the time.
