JOB DESCRIPTION
Responsibilities:
Under the guidance of the Restaurant Chef, the Sous Chef collaborates daily with the Executive Chef and Restaurant Chef on matters concerning recipes, staffing, menus, preparation, and presentation.
Key Duties Include:
- Scheduling staff effectively.
- Guiding team members on daily tasks and monitoring their progress to ensure timely completion.
- Managing production levels to minimize waste and keeping the Chef informed of progress.
- Enforcing operational standards and procedures set by the Chef, including sanitation, product tasting, and presentation.
- Ensuring all food is prepared according to established operational standards.
- Engaging with guests to enhance their experience.
- Assisting other kitchen staff with their daily responsibilities.
- Striving to reduce overproduction and over-purchasing.
- Ensuring all food items are prepared, stored, and accounted for according to established standards.
- Maintaining production and storage areas in compliance with health department regulations.
- Fostering positive relations with the public and fellow employees at all times.
- Ensuring a clean, safe, and hazard-free work environment within the area of responsibility.
Qualifications:
A minimum of four (4) to five (5) years of experience in a high-volume kitchen setting.
Work Environment:
Responsibilities are typically carried out in the back of house of the casino, which can be fast-paced and noisy.
There may be occasions where interaction with the Casino Floor is necessary.
On the Casino Floor, exposure to environmental factors such as secondhand smoke and high noise levels may occur.
While performing job duties, employees are frequently required to stand, walk, use hands for various tasks, reach with arms, communicate, and utilize their sense of taste and smell.
Specific vision abilities required include close, distance, color, and peripheral vision, depth perception, and the ability to adjust focus.
Native American Preference Policy:
The Tribal Council prioritizes Native Americans in all employment practices.
First preference is given to members of the Seminole Tribe who meet job qualifications, followed by members of other federally recognized Native American Tribes.
Employment Process:
Seminole Gaming's hiring process necessitates candidates to obtain gaming licensure by successfully completing a background check with Seminole Gaming Compliance and Regulations prior to employment.
