Mr. C Miami Coconut Grove is a creation of the fourth generation of hospitality leaders, brothers Ignazio and Maggio Cipriani. YOUR ROLE AS AN ASSISTANT PASTRY CHEF
The Assistant Pastry Chef will play a crucial role in managing the pastry department within a professional kitchen. This position involves overseeing the creation of a diverse array of pastries, desserts, and baked goods while maintaining high standards of quality and consistency. The Assistant Pastry Chef will lead a team of pastry cooks and work closely with the head pastry chef to innovate new recipes and menu offerings.
KEY RESPONSIBILITIES:
- Pastry Creation: Prepare and craft a variety of pastries, desserts, and baked goods following established recipes and quality standards. Ensure uniformity in taste, presentation, and quality across all products.
- Menu Innovation: Collaborate with the executive chef or head pastry chef to design and refresh the pastry menu. Contribute creative ideas for new desserts and seasonal specialties.
- Team Leadership: Supervise, train, and inspire a team of pastry cooks. Delegate tasks and provide support to ensure efficient operations and uphold high performance standards.
- Inventory Oversight: Track inventory levels of pastry ingredients and supplies. Place orders as necessary and maintain adequate stock levels to prevent shortages or waste.
- Quality Assurance: Conduct regular inspections of finished products to confirm they meet established standards. Address any discrepancies promptly and implement corrective actions.
- Food Safety Compliance: Follow all food safety and sanitation regulations, including proper handling, storage, and labeling of food items. Keep a clean and organized workspace.
- Equipment Care: Ensure all pastry equipment is properly cleaned, maintained, and functioning well. Report any equipment issues or required repairs to the appropriate personnel.
- Cost Management: Assist in managing the pastry department's budget by minimizing waste, controlling portion sizes, and identifying cost-saving opportunities without compromising quality.
- Collaboration: Work in coordination with other kitchen staff and departments to ensure seamless operations and timely delivery of pastry orders. Maintain effective communication with colleagues to foster a cohesive work environment.
- Creativity and Trend Awareness: Stay informed about current pastry trends, techniques, and new ingredients. Continuously seek ways to enhance recipes and develop innovative pastry creations.
QUALIFICATIONS AND SKILLS:
- Proficient in reading and writing to facilitate effective communication.
- Strong verbal and written communication skills.
- Ability to learn and execute all essential job functions accurately and safely.
- Experience in training team members in fine food preparation and a solid understanding of menu structure.
- Capability to taste all foods to ensure proper preparation.
- Physical stamina to walk, stand, and perform essential functions for extended periods.
- Ability to perform tasks requiring bending, stooping, kneeling, and walking.
- Auditory and visual skills to observe and respond to emergency situations.
- Fluency in the primary language(s) used in the workplace.
- Willingness to work various shifts, including nights, weekends, and busy periods.
- Ability to multitask in a fast-paced environment.
PHYSICAL REQUIREMENTS:
- Most tasks are performed indoors in a controlled environment.
- Must be able to stand and maintain mobility for up to 8 hours.
- Ability to lift trays weighing up to 25 lbs regularly.
- Must be able to bend, stoop, squat, and stretch as needed.
- Requires manual dexterity to operate necessary equipment.
EDUCATION AND EXPERIENCE:
- Bachelor's degree in Culinary Arts.
- Minimum of three years of experience as a Junior Sous Chef or Lead Cook.
GROOMING STANDARDS:
All employees are expected to maintain a neat, clean, and professional appearance in accordance with Mr. C's standards.
