Join our dynamic culinary team at Clemente Bar, an exclusive cocktail lounge renowned for its innovative cocktails and plant-based cuisine. As a key member of our kitchen staff, you will play a vital role in maintaining our high standards of culinary excellence.

Reports to: Executive Chef

  • Prep cooks
  • Commis

Key Responsibilities

Culinary Leadership

  • Oversee the daily operations of the kitchen, guiding the line cooks, commis, and externs in their preparation and presentation of dishes.
  • Ensure cleanliness and organization of storage areas in compliance with health and safety regulations.
  • Conduct taste tests of prepared items to guarantee quality and flavor profiles.
  • Manage an assigned station, ensuring that all dishes are prepared and plated to perfection.
  • Collaborate with the dining room and kitchen staff to coordinate the timing of dish service.
  • Work closely with the Chef de Cuisine to maintain equipment and facilities according to industry standards.
  • Maintain comprehensive documentation of food safety practices and procedures.

Staff Development

  • Assist in the recruitment and selection of kitchen personnel as needed.
  • Proactively identify and mentor new kitchen team members to foster their development.
  • Serve as the primary mentor for line cooks, commis, and externs, providing training and support.

Menu Innovation

  • Collaborate with the Chef de Cuisine in the creation of new menu items.
  • Assist in the development and cost analysis of recipes.
  • Explore and implement new cooking techniques as required.

Qualifications

  • Minimum of 3 years of management experience in a culinary setting.
  • Proficient knife skills and a strong understanding of culinary techniques.
  • Ability to interpret and execute recipes accurately.
  • Excellent communication skills, both verbal and written.
  • Proficient in Microsoft Office and other relevant software.
  • Strong mentoring capabilities to guide junior staff.
  • Ability to multitask and work independently in a fast-paced environment.
  • Physical capability to lift up to 50 lbs and stand for extended periods.
