Position Overview

The Lead Culinary Operations Manager is tasked with overseeing kitchen staff and managing all culinary functions. This position involves coordinating various culinary activities to ensure smooth operations.

Key Responsibilities

  • Guide and mentor kitchen staff to enhance their skills.
  • Forecast food requirements and manage procurement or purchasing of ingredients.
  • Develop and refine recipes while standardizing production methods to maintain quality.
  • Set presentation standards and quality benchmarks.
  • Design and cost menus effectively.
  • Ensure proper operation and maintenance of kitchen equipment.
  • Uphold safety and sanitation standards within the kitchen environment.
  • Occasionally prepare selected dishes, limited to 20% of the time.
  • Organize special catering events and provide culinary training or demonstrations.
  • Directly manage kitchen personnel, including hiring, coaching, conducting performance evaluations, and recommending salary adjustments.

Qualifications

  • Minimum of 8 years in culinary management and industry experience.
  • A bachelor's degree or equivalent professional experience is required.
  • Proven ability to lead in a diverse environment with a strong focus on client and customer service.
  • Preferred experience in managing food and labor costs, menu creation, and team development.
  • Experience with P&L accountability and/or contract-managed services is advantageous.
