Culinary & Pastry Apprenticeship Responsibilities:

  • Receive and comprehend food orders from the dining area and/or the supervising manager.
  • Assist fellow team members in preparing requested dishes and coordinate orders for service staff pickup.
  • Prepare menu items following standard recipes in a timely and professional manner.
  • Maintain cleanliness and organization of workstations, kitchen areas, and storage facilities.
  • Ensure the highest quality production in a sanitary and professional environment.
  • Oversee inventory management at workstations.
  • Minimize waste through proper storage, rotation, and production management.
  • Complete the food safety training program within the initial month of employment.
  • Report any issues encountered during shifts to the Club Chef or Sous Chef on duty.
  • Assist in providing breaks for colleagues as necessary.
  • Adhere to departmental uniform and grooming standards.
  • Collaborate effectively with all departmental staff.
  • Be available for a variety of shifts, including evenings, weekends, and holidays.
  • Perform additional duties as assigned.
Culinary & Pastry Apprenticeship Minimum Qualifications:
  • High School diploma or equivalent, with a minimum starting age of 16 years.
  • Active ACF student membership throughout the apprenticeship duration.
  • Ideally, possess at least one year of experience in food production.
  • Basic knowledge of food production and familiarity with standard recipes is essential.
  • Previous experience in food service and recipe knowledge is highly desirable.
  • Understand the requirements of the apprenticeship program, including work processes and instructional needs.
  • Commit to fulfilling obligations to The Landings Golf & Athletic Club and supervising chefs.
  • Attend all related instructional courses, including preparation for the ACF exam.
  • Maintain regular communication with the program coordinator.
  • Keep accurate records of hours worked to demonstrate progress.
  • Complete and maintain the skills gallery.
  • Ability to follow verbal and written instructions effectively.
  • Demonstrate tact and understanding in handling various customer service challenges.
  • Manage a diverse workload and prioritize tasks in a fast-paced environment.
  • Exhibit strong organizational skills and the ability to handle multiple responsibilities efficiently.
  • Show a willingness to provide exceptional service to members and a desire to lead the department towards achieving its mission.
Culinary & Pastry Apprenticeship Physical Requirements:
  • Ability to lift, carry, or move items weighing up to 50 pounds for a significant portion of the shift.
  • Engage in pushing, pulling, bending, stooping, and reaching for the majority of the shift.
