The Role
We are seeking a highly skilled and organized Pastry Sous Chef to join our culinary management team. As a key member of our team, you will be responsible for collaborating with our Executive Chef to develop menus, managing pastry and baking production, and overseeing the setup of breakfast lines and expedited AM services.
Key Responsibilities
- Culinary Management
- Work closely with the Executive Chef to develop menus that showcase our culinary expertise
- Manage pastry production to ensure high-quality products and efficient operations
- Oversee the execution of menus, prep teams, and service standards to deliver exceptional guest experiences
- Organizational and Budgeting
- Create and manage financial performance, purchasing, and deliveries to balance team and guest experiences
- Develop and implement strategies to optimize labor costs, resources, and team performance
- Learning and Development
- Coach and train culinary team members on menu knowledge, presentation, and service standards
- Align the culinary team with hotel values and culture, promoting a positive and inclusive work environment
- Implement programs to recognize and reward team members, promoting personal and professional growth
What You'll Get
As a Pastry Sous Chef at The Drayton Hotel, you will have the opportunity to work in a hands-on, lead-by-example role for highly anticipated restaurant and bar openings in Savannah. About You
We are looking for a warm and engaging individual with a hands-on attitude and attention to detail. You should have excellent organization, problem-solving, and project management skills, with the ability to think and act in high-pressure situations. You will be a strong communicator with the ability to work well with guests and fellow peers. Prior pastry experience in an upscale dining environment is required.
