Position Overview

The Assistant Culinary Leader plays a crucial role in supporting the Executive Chef and the entire kitchen brigade by coordinating, directing, and executing various kitchen operations. Through effective training and leadership of culinary team members, they uphold the restaurant's quality, service standards, and overall guest satisfaction. Responsibilities include managing and assisting in the preparation of mis-en-place for all kitchen stations, expediting service, as well as overseeing staff schedules, product procurement, inventory management, and cost control.

Key Responsibilities:

  • Exemplify the standards of the restaurant by demonstrating professionalism in all communications.
  • Focus on continuous improvement in guest experience, operational efficiency, employee satisfaction, and retention.
  • Collaborate with the Executive Chef and Chef de Cuisine to ensure all food items are consistently prepared and served according to established standards.
  • Adhere to recipes and methods of food preparation, plating, and service as per restaurant guidelines.
  • Exhibit motivation and possess excellent communication, problem-solving, and organizational skills.
  • Maintain a clean and efficient workspace, respecting quality ingredients and meticulous preparation.
  • Work effectively as part of a team, ensuring smooth service operations and high-quality service.
  • Prepare necessary documentation, including forms, reports, and schedules in an organized manner.
  • Guide and develop team members towards personal growth and adherence to quality standards.
  • Implement all policies and procedures, administering fair and consistent corrective actions as needed.
  • Enhance service efficiency, maintaining appropriate pace and quality while collaborating with the dining room team.
  • Keep recipe books updated and create cost cards for new menu items.
  • Organize daily mise en place inventory to generate production lists for all stations.
  • Participate in regular inventory checks and maintain relevant financial and inventory reports, ensuring stock rotation and profitability.
  • Engage with front-of-house management to participate in staff training and ensure menu knowledge is up to date.
Qualifications:
  • 1-3 years of experience in a restaurant or foodservice environment of similar caliber.
  • 1 year of experience in a supervisory role preferred.
  • High School Diploma or equivalent education required.
  • Associate's Degree or certification in Culinary Arts preferred.
  • Prior experience in restaurants or food and beverage operations is essential.
  • Servsafe certification is mandatory.
  • Strong verbal and written communication skills.
  • Ability to read and interpret documents in clear English.
  • Basic computer skills are required, including knowledge of accounting programs and reservation management systems.
  • Ability to perform in a fast-paced environment and manage multiple tasks effectively.
  • Physical capability to lift up to 30 pounds and work in a standing position for extended periods.
  • Flexibility to work varied shifts, including mornings, evenings, weekends, and holidays.
  • Proficiency in a secondary language is a plus but not required.
