The Chief Sommelier plays a pivotal role in enhancing the dining experience through expert wine selections and exceptional service. This individual will oversee the wine program, ensuring it aligns with the restaurant's high standards and the Momofuku ethos.

The daily tasks of the Chief Sommelier encompass leadership in all beverage-related areas. This position requires collaboration with the General Manager, culinary team, and front-of-house managers to develop and implement a dynamic beverage program. The Chief Sommelier will be responsible for guest interactions regarding beverages, staff training, and the overall management of wine offerings.

Compensation Rate: $20.00 (plus applicable tips)

Admin Compensation Rate: $25.00 per hour

Key Responsibilities

  • Collaborate with the Beverage Director and General Manager to design a wine program that elevates the guest experience.
  • Assist in the procurement process, including ordering and receiving goods, under the guidance of the Beverage Director and General Manager.
  • Support the management of beverage costs and pricing strategies.
  • Facilitate training sessions for the Sommelier team to enhance product knowledge and service skills.
  • Conduct educational sessions for the entire Front of House team to improve beverage knowledge.
  • Assist in the development of Standard Operating Procedures (SOPs) for wine service.
  • Monitor wine inventory and manage event-specific depletions.
  • Maintain an organized wine storage system and physical wine book.
  • Ensure the setup and breakdown of the wine service station.
  • Drive guest satisfaction through exceptional beverage service and sales.
  • Serve alcoholic beverages responsibly and in accordance with industry standards.
  • Communicate effectively with the team regarding menu updates and stock changes.
  • Document all relevant beverage wastage and corked bottles accurately.
  • Propose enhancements to the beverage program to the management team.
  • Maintain cleanliness and organization in service areas throughout shifts.
  • Perform various administrative tasks as directed by the General Manager.

Required Qualifications

  • At least 2 years of experience in a Sommelier or wine-focused role within a high-volume, upscale dining environment.
  • Strong attention to detail and a commitment to excellence.
  • Solid foundational knowledge of wine, with additional beverage knowledge being a plus.
  • Team-oriented mindset with a collaborative approach.
  • Positive attitude and eagerness to learn and grow professionally.
  • Excellent communication and organizational skills.
  • Ability to handle pressure and resolve guest conflicts effectively.
  • Willingness to accept feedback and implement constructive changes.
  • Adaptability in a fast-paced, dynamic environment.

Preferred Qualifications

  • Proven track record of driving beverage sales, including premium wine selections.
  • Experience in expanding and diversifying wine lists to enhance the overall program.
  • Commitment to ongoing education and mastery of the beverage program.
  • History of effectively training service staff on various beverage offerings.
  • Ability to mentor new sommeliers in all aspects of the role.
  • Demonstrated reliability and a focus on continuous improvement.

Physical Demands

  • This position requires the ability to see, hear, speak, reach, and lift up to 25 pounds frequently, and up to 50 pounds occasionally. The role involves sitting, standing, and moving throughout shifts, with or without reasonable accommodation.
