Job Summary

We are seeking a highly skilled and experienced Chef de Partie to join our culinary team at Trump National Doral - Miami. As a key member of our kitchen staff, you will be responsible for overseeing the preparation and presentation of our menu items, ensuring exceptional quality and consistency in every dish.

Key Responsibilities
  • Prepare and cook a variety of menu items, including fish and meats, to the highest standards of quality and presentation.
  • Oversee the preparation of food in all areas of the kitchen during assigned shifts, ensuring that all dishes are prepared to the highest standards.
  • Communicate effectively with the Chef and Sous Chef to ensure that all kitchen operations are running smoothly and efficiently.
  • Set up Daily Specials and Happy Hour Food according to schedule and spaces, ensuring that all dishes are prepared and presented to the highest standards.
  • Assist in providing a safe working environment, adhering to all health and safety protocols and procedures.
  • Assist the Chef and Sous Chef in overseeing cleanliness and sanitation, ensuring that all kitchen areas are clean and well-maintained.
  • Visually check food quality, ensuring that all dishes meet the highest standards of quality and presentation.
  • Prepare staff schedules with guidance from the Chef and Sous Chef, ensuring that all kitchen staff are aware of their duties and responsibilities.
  • Assist with outlet food ordering, ensuring that all ingredients and supplies are ordered in a timely and efficient manner.
  • Verify that prepared food meets requirements for quality and quantity, ensuring that all dishes are prepared to the highest standards.
  • Ensure compliance with federal, state, local, and company health, safety, sanitation standards, adhering to all protocols and procedures.
  • Clean food preparation areas, cooking surfaces, and utensils, ensuring that all kitchen areas are clean and well-maintained.
  • Responsible for all aspects of quality control, supervision, and production for their area, ensuring that all dishes are prepared to the highest standards.
Requirements
  • Ability to perform all hourly kitchen staff's essential functions.
  • Must be able to read, write, speak, and understand English.
  • Must be able to grasp, carry, and/or lift supplies weighing up to 50 lbs.
  • Must have sufficient manual dexterity to work with knives, spatulas, spoons, tongs, and other kitchen utensils.
  • Must be able to operate all kitchen equipment, including but not limited to, slicer, mixer, blender, stoves, oven, broiler, etc.
  • Must have intermediate mathematical skills.
  • Must be able to perform duties in a confined work space, standing for long periods of time, and in extreme temperatures.
  • Must be able to make quick and accurate decisions sometimes under stress.
  • Must have a full use of senses of hearing, taste, smell, touch, and sight in order to perform the essential functions of this position.
Qualifications
  • High School Diploma or equivalent required.
  • Culinary degree or equivalent experience in hotel or restaurant.
  • Minimum three years of experience as a cook.
  • Minimum two years of experience in a similar environment.
  • Minimum of 2 years supervisory experience in the culinary department.
  • ServSafe Certified preferred.
