About the Role

The Sous Chef position is a key leadership role within the culinary team, providing direction and coaching to team members to drive exceptional food and guest experiences at the location.

Key Responsibilities
  • Proactively coach and motivate team members to deliver outstanding results
  • Identify opportunities and drive improvement in location operations
  • Monitor quality and sanitation standards
  • Deliver against financial goals and budgets
  • Set the standard for culinary excellence
  • Oversee equipment maintenance routines
  • Communicate and monitor par levels
  • Support the creation of menu build diagrams and monitor output to ensure standards are adhered to
  • Ensure all routine kitchen management procedures are adhered to, including opening and closing checklists, cleaning schedules, temperature checks, waste sheets, and pest control
  • Creation of menu specifications, as needed
  • Set standards for chef table setups
  • Creation of prep sheets and line layout diagrams to ensure consistent and efficient food production
  • Perform daily line checks to verify quality and flavor standards
  • Lead game day culinary operations
  • Manage end-of-month inventory, in partnership with the purchasing team, to ensure accurate recording of stock
  • Proactively monitor and manage food waste to drive cost savings
  • Deliver training and coaching to team members on menu and general culinary skills
  • Manage employee breaks to ensure team well-being
  • Deliver pre-shift meetings to set the tone for events
  • Conduct corrective action with team members to address performance issues
  • Complete onboarding and orientation for new culinary team members
  • Ensure all elements of food ordering, delivery, prep, transportation, and service are conducted to a high standard, in line with Levy's sanitation and safety Core Signatures
  • Support other Levy locations, as needed
  • Support the maintenance and update of recipes
  • Manage culinary department budget
Requirements
  • 2+ years of experience in a culinary leadership position
  • Culinary degree preferred
  • High level of computer literacy
  • Understanding of financial concepts
  • Passion for hospitality, food, and retail
  • Excellent interpersonal and stakeholder management skills
