POSITION SUMMARY:

A Culinary Sanitation Specialist is responsible for upholding cleanliness and hygiene standards within the kitchen and adjacent areas. This role involves adhering to a structured cleaning regimen for the kitchen and other food and beverage service areas. The specialist utilizes appropriate cleaning agents and chemicals according to manufacturer instructions to ensure all surfaces are maintained in pristine condition.

KEY RESPONSIBILITIES:

  • Ensure thorough cleaning of kitchen equipment and workspaces, including freezers, walk-in coolers, and high-access areas such as ceilings and ventilation systems.
  • Maintain sanitation and cleanliness of work areas and equipment in compliance with health regulations.
  • Responsible for cleaning all cooking appliances, including deep fryers, grills, stoves, and ovens.
  • Regularly clean and inspect dishwashing machines to verify proper temperature during the final rinse cycle.
  • Implement safe cleaning practices in accordance with health and safety standards.
  • Perform sweeping, mopping, and scrubbing of kitchen floors, drains, and mats.
  • Disinfect work surfaces, walls, and refrigeration units thoroughly.
  • Conduct deep cleaning of ovens, stoves, and other heavy-duty kitchen equipment to maintain sanitation standards.
  • Manage waste disposal by segregating and removing trash to designated containers.
  • Steam clean or wash out garbage receptacles to ensure proper sanitation.
  • Maintain cleanliness in kitchen loading and receiving areas.
  • Perform outdoor power washing of equipment as needed.
  • Wash and sanitize pots, pans, and trays as required.
  • Utilize ladders safely to clean ceilings and air handler covers.
  • Execute general cleaning tasks using approved institutional cleaning products as assigned.
  • Organize and maintain the chemical storage area and stewarding equipment.
  • Handle biohazard clean-up in back-of-house kitchen environments.
  • Wear protective gear while performing duties to ensure personal safety.
  • Report any necessary repairs or maintenance needs in the kitchen area to management.
  • Assist in transferring supplies and equipment between storage and work areas.
  • Participate in training sessions, safety meetings, and departmental briefings as scheduled.
  • Clean and sanitize all beverage service areas.
  • Perform additional duties as assigned.

MINIMUM REQUIREMENTS:

  • Previous experience in heavy cleaning or kitchen roles is preferred.
  • Ability to operate floor cleaning equipment is advantageous.
  • Familiarity with cleaning chemicals and ability to interpret safety labels.
  • Understanding of safety protocols and industrial kitchen equipment maintenance.

EDUCATIONAL BACKGROUND:

High School Diploma or GED is preferred.

LICENSE REQUIREMENTS:

Must successfully pass a pre-employment drug screening and background check.

PHYSICAL AND MENTAL DEMANDS:

  • Capable of lifting, pushing, and carrying up to 75 pounds.
  • Must be able to climb ladders and reach above shoulder height.
  • Frequent walking and standing required.
  • Constant auditory, visual, and verbal communication is necessary.
  • Regular balancing, bending, reaching, twisting, and stooping movements are expected.

WORK ENVIRONMENT:

  • Work is conducted indoors in a climate-controlled setting.
  • Close quarters while collaborating with team members.
  • Exposure to high noise levels and smoke is common.
