Culinary Coordinator Position Overview:
This role is responsible for overseeing the Culinary and Food Runner operations for all orders originating from the Front of House (FOH) area. A comprehensive understanding of our menu and presentation standards is essential, along with prior experience in a similar role. Strong communication abilities are crucial, as well as the capacity to serve as a role model for fellow team members.
Culinary Coordinator - Key Responsibilities:
- Deliver outstanding service levels, emphasizing graciousness, ownership, and a sense of luxury.
- Train colleagues on proper Culinary procedures in collaboration with management.
- Maintain adequate stock levels and supplies as required.
- Complete necessary daily documentation for the department.
- Possess in-depth knowledge of the menu and the ingredients used in dish preparation.
- Ensure all orders are accurate and complete prior to delivery.
- Exhibit above-average knowledge of wines and spirits.
- Adhere to all hotel protocols as outlined in the handbook and rating criteria.
- Provide necessary information as requested.
- Address guest requests directly without transferring calls to other departments.
- Inform management of any guest feedback or concerns.
- Polish silverware during downtime.
- Prepare rollups during downtime.
- Perform any other job-related tasks as assigned.
- Follow procedures for delivering to guest rooms.
- Assist the host in clearing trays from hallways and service areas.
- Participate in staff meetings and contribute insights.
- Assist in emergency and security protocols as directed by management and the established emergency plan.
The Senior Food Runner will spearhead food delivery efforts across the restaurant, including the dining room, lounge, in-room dining, and hotel amenities. This position requires the ability to multitask in a fast-paced environment while serving as a role model for others.
Food Runner - Key Responsibilities:
- Deliver exceptional service levels, focusing on graciousness, ownership, and a sense of luxury.
- Train others on correct Food Runner procedures in partnership with management.
- Stock the line with all necessary supplies for the shift (condiments, to-go containers, etc.).
- Maintain cleanliness of the line, sanitizing before, during, and after the shift.
- Follow directions from the Culinary Coordinator regarding delivery of finished orders (front, in-room dining, or tables).
- Inquire with guests if they require anything further and fulfill their requests to ensure a great experience.
- Maintain communication with the Culinary Coordinator and in-room dining regarding any needs.
- Assist in in-room dining when necessary.
- Help the host in clearing trays from hallways and service areas.
- In the morning, if no host is available, this position will conduct hall runs as directed by a manager.
- Polish silverware during downtime.
- Prepare rollups during downtime.
When staffing permits, the Culinary Coordinator/Food Runner may also assist with in-room dining duties.
In-Room Dining Position Overview:
The Senior In-Room Dining Server will lead the setup and delivery of all in-room dining orders. Additionally, between designated hours, they will ensure timely delivery of all hotel amenities, collaborating with management and other departments as needed.
In-Room Dining - Key Responsibilities:
- Deliver exceptional service levels, emphasizing graciousness, ownership, and a sense of luxury.
- Train others on proper In-Room Dining procedures in partnership with management.
- Stock the line and in-room dining area with all necessary supplies for the shift (condiments, rollups, to-go containers, etc.).
- Maintain cleanliness of the line and in-room dining area, sanitizing before, during, and after the shift.
- Print checks and ensure they accompany the correct orders, obtaining signatures upon delivery.
- Prepare and set up orders for delivery, including condiments, garnishes, and seasonings.
- Ensure timely delivery of accurate orders.
- Maintain signed checks in an organized manner for return to the host stand for processing.
- Deliver all amenities during designated hours, ensuring any accompanying cards are delivered to the correct room.
- Provide the host with a complete list of all amenities to be entered at the beginning of the shift.
- In the morning, if no host is available, this position will conduct hall runs as directed by a manager.
- Polish silverware during downtime.
- Prepare rollups during downtime.
- Ability to work occasional long hours.
- Ability to exert up to 100 pounds of force occasionally, and/or 50 pounds of force frequently, and/or up to 20 pounds of force constantly to lift, carry, pull, or otherwise move objects.
- Ability to stand continuously for the duration of the shift (6-8 hours a day).
- Ability to walk/run continuously for the duration of the shift (6-8 hours a day).
- Ability to work in high-pressure situations.
- High School Diploma or equivalent preferred.
- Six months of related experience preferred.
- Completion of Responsible Beverage Service training & ABC exam required.
- Excellent command of the English language.
