Position Overview:

The Assistant Culinary Leader at Terranea Resort's bashi restaurant will oversee, coordinate, and engage in the activities of cooks and kitchen staff involved in the preparation and cooking of meals within the resort's dining establishments. This role includes participation in the planning of the Culinary Department and ensuring adherence to all processes and procedures according to Terranea Resort Standards.

Key Responsibilities:

  • Assist in the development and execution of menus.
  • Create detailed descriptions for all written menus.
  • Contribute to research and development initiatives.
  • Design daily specials in alignment with our culinary concepts.
  • Support the creation of menus for various occasions.
  • Manage ordering of supplies based on mise en place and menu specifications.
  • Ensure daily rotation of all mise en place to guarantee freshness.
  • Maintain established standards for all menu items.
  • Coordinate and develop opening and closing procedures.
  • Draft job descriptions and standard operating procedures to enhance quality and efficiency.
  • Execute all mise en place functions, including setup, scheduling, ordering, and receiving.
  • Communicate effectively with team members, management, and both front and back of house staff.
  • Participate in meetings such as daily communications, culinary line-ups, and weekly staff gatherings.
  • Maintain sanitation and HACCP documentation in compliance with health codes.
  • Ensure cleanliness across all food and beverage departments.
  • Guide and support the team to achieve guest satisfaction goals.
  • Prepare weekly schedules based on forecasts.
  • Understand and manage food, labor, and operational costs effectively.
  • Relieve cooks and chefs during various shifts.
  • Practice active listening before taking action.
  • Communicate effectively about both popular and less favorable topics.
  • Utilize the associates handbook and CoralTree philosophy to coach team members.
  • Foster professional relationships among all Terranea Resort associates.
  • Motivate team members to maintain a cohesive working environment.
  • Ensure accurate maintenance of the menu and recipe database.
  • Perform related duties as assigned.
  • Support the team, learning and teaching as necessary.
  • Act as an ambassador for the outlets and Terranea within the community.

Qualifications:

  • Strong customer service orientation.
  • Excellent verbal and written communication skills.
  • Ability to implement and uphold service standards.
  • Strong organizational and prioritization skills.
  • Ability to interact positively with all associates and guests.
  • Capability to thrive in high-pressure situations.
  • Ability to lift and carry up to 50 pounds occasionally and up to 30 pounds frequently.
  • Willingness to stand or walk for extended periods.

Experience, Education, & Licensure:

  • Minimum of 1 year of culinary management experience, with at least 5 years in culinary arts within an upscale restaurant, hotel, resort, or club environment.
  • Proficiency in English, including speaking, hearing, understanding, reading, and writing.
  • Culinary Arts degree preferred.
  • Knowledge of Serve Safe, sanitation, and HACCP standards.

Compensation:

Base Pay Start Rate: $66,560/Yr. - $72,000/Yr.
