About the Role:
The Capital City Club is seeking an experienced Pastry Chef to join our culinary team in Downtown. As a key member of our team, you will be responsible for leading the production of all desserts, pastries, and baked goods for our members and guests.
Responsibilities:
- Lead the production of all desserts, pastries, and baked goods for the Capital City Club.
- Develop and implement new dessert and pastry menus to meet the evolving tastes and preferences of our members and guests.
- Manage the inventory and ordering of all baking supplies and equipment.
- Ensure that all food is prepared and presented to the highest standards of quality and presentation.
- Collaborate with the Executive Chef and other members of the culinary team to ensure seamless execution of all culinary operations.
- Monitor and maintain the cleanliness and organization of the pastry kitchen and all related equipment.
- Develop and implement cost-saving initiatives to ensure that the pastry department operates within budget.
- Recruit, train, and develop a team of pastry cooks and assistants to support the production of all desserts and pastries.
Requirements:
- 3+ years of experience as a Pastry Chef in a large upscale club, hotel, restaurant, or cruise ship environment.
- Excellent from-scratch baking skills, including cakes, cookies, dough, yeast bread, quick bread, petit fours, truffles, chocolates, candies, etc.
- Possess knowledge of pairing desserts with wine, liquor, or beer based on sensory dynamics.
- Possess excellent plated dessert skills for both banquet and à la carte functions.
- Possess strong skills in sugar work, chocolate work, airbrushing, pastillage, gum paste, fondants, ice creams, sorbets, etc.
- Possess excellent pastry display skills for buffet-type presentation of petit fours, mini pastries, full-size pastries, or any other type of buffet presentation.
- Possess excellent verbal and written communication skills.
- Possess thorough knowledge and ability to create contemporary/new pastry production and presentation.
- Experience in ordering own supplies for own department, within budget.
Education Requirements:
- Associate Degree in Culinary Arts or 5 years of pastry experience.
