Position Overview

The Capital City Club Downtown Culinary Department is seeking a passionate, self-driven, and collaborative individual for the role of Lead Pastry Artisan. Key Responsibilities:

The Lead Pastry Artisan will oversee all aspects of dessert creation, recipe development, and quality assurance for both à la carte and banquet services. This role requires active participation in production and collaboration with the Executive Chef, Catering Department, and Front of House Management.

  • Maintain consistent communication with the Executive Chef regarding pastry production status.
  • Ensure timely and cost-effective production in alignment with budgetary constraints.
  • Demonstrate the ability to produce high-quality desserts, even under tight deadlines.
  • Communicate effectively with the Executive Chef regarding any challenges in meeting production timelines, while proposing solutions.
  • Translate the Executive Chef's dessert vision into both large and small-scale production.
  • Engage with members to create custom-designed wedding cakes and pastries.
  • Inspect and maintain all equipment in the pastry area, reporting any issues to the Executive Chef and Engineering Department.
  • Exhibit thorough knowledge of pastry and culinary arts, taking full responsibility for the quality and presentation of all items produced.
  • Monitor inventory of baking supplies and equipment, placing orders as necessary within budgetary guidelines approved by the Executive Chef.
  • Ensure compliance with health and safety standards by properly storing food and maintaining cleanliness in all areas.
Qualifications:
  • Minimum of 3 years' experience as a Pastry Chef in a large upscale club, hotel, restaurant pastry operation, or cruise ship environment.
  • Exceptional skills in baking from scratch, including a variety of desserts such as cakes, cookies, and pastries.
  • Knowledge of pairing desserts with beverages based on sensory dynamics.
  • Strong skills in plated desserts for both banquet and à la carte services.
  • Expertise in sugar work, chocolate work, and various pastry techniques.
  • Proficient in creating visually appealing pastry displays for buffet presentations.
  • Excellent verbal and written communication skills.
  • Comprehensive knowledge of regional and international desserts.
  • Ability to innovate and create contemporary pastry presentations.
  • Experience managing supply orders within budget constraints.
Educational Background:

Associate Degree in Culinary Arts or equivalent experience of 5 years in pastry.
