Overview

Responsible for the management of daily culinary operations, including kitchen, cafeteria, production, and catering services. Ensures that patient meals are prepared according to production requirements, portion standards, and IDDSI guidelines. Directly supervises Food Service Assistants to uphold exceptional sanitation, cleanliness, and safety standards.

Engages in quality assurance initiatives, which include conducting taste and temperature assessments, maintaining logs for refrigerator, tray line, and dish machine temperatures, and ensuring compliance with cleaning protocols by keeping completed documentation on file and performing regular inspections of the areas.

Primary Duties

  • Oversee food service processes during assigned shifts to achieve quality and efficiency objectives.
  • Monitor and maintain kitchen equipment in accordance with departmental standards.
  • Supervise sanitation and housekeeping services to comply with established regulations.
  • Direct and assess the patient tray line to ensure compliance with departmental criteria regarding portion sizes, presentation, quality, temperature, taste, and accuracy of trays.
  • Conduct rounds in the kitchen and cafeteria to enhance operational efficiency and provide staff support as necessary.
  • Ensure security measures are upheld during shifts.
  • Complete daily temperature logs.
  • Assist staff with technological needs, including mandatory training and maintaining current contact information.
  • Prepare periodic reports as directed by management.
  • Develop weekly work schedules to ensure sufficient staffing to meet departmental demands.
  • Design and deliver in-service training sessions for department personnel on a monthly basis or as required.
  • Monitor time clock data and complete payroll tasks on a weekly basis.
  • Guide, mentor, and support team members to meet performance goals.
  • Conduct annual performance reviews in line with organizational policies.
  • Delegate tasks to staff based on their skills, professional growth, and departmental needs.
  • Participate in additional departmental, organizational, or network activities as per established goals.

Qualifications

Education

Required

  • High School Diploma or GED.
Preferred

  • Associate's Degree.
Experience

Preferred

  • At least 2 years of experience in a supervisory role within food services.
Skills

  • Proficient in reading, writing, and speaking English.
  • Competent in computer usage, with a preference for Microsoft Office applications and the ability to learn new software.
