ROLE SUMMARY

The Kitchen Manager plays a pivotal role in assisting the management team by exemplifying leadership and equipping staff with the necessary skills to deliver an outstanding dining experience for every guest.

This position entails providing comprehensive leadership, oversight, and guidance during shifts to consistently achieve or surpass guest satisfaction concerning food safety and quality.


KEY RESPONSIBILITIES
People Management

  • Offer direction, mentorship, and leadership to all back-of-house personnel (including food preparation, safety, sanitation, and adherence to company policies)
  • Recruit, mentor, and train kitchen staff to effectively perform various tasks and operate equipment
  • Accountable for instructing kitchen and concessions staff on cleanliness and sanitation protocols
  • Ensures compliance with company policies and procedures in collaboration with HRBP
Operational Processes

  • Utilize all necessary tools to guarantee quality food is prepared according to recipe specifications within company-approved timeframes
  • Ensure food product freshness through proper procurement and product rotation, employing the FIFO method
  • Conduct daily checks on food storage and temperatures, documenting findings and alerting maintenance of any discrepancies
  • Attend training sessions for new menu items and educate kitchen staff on proper preparation techniques
  • Communicate, implement, and monitor all changes related to food products and kitchen systems and procedures
  • Verify and maintain appropriate food holding and refrigeration temperature control points
  • Oversee the rollout of all company initiatives and new menu introductions
  • Ensure completion of daily opening, mid, and closing operational tasks
  • Maintain kitchen equipment by adhering to manufacturer’s instructions, educating staff on proper usage, ensuring equipment supplies, and coordinating repairs as needed
Guest Experience

  • Deliver an exceptional guest experience through the execution of high-quality food and beverages
  • Engage in proactive guest management by adhering to empowerment policies and identifying opportunities before they arise, addressing issues promptly to leave guests with a positive impression of the company
  • Assist managers and the General Manager with front-of-house responsibilities as required
Financial Management

  • Responsible for weekly kitchen staff scheduling based on theater occupancy forecasts, movie schedules, and employee availability
  • Execute private events to optimize sales and enhance the guest experience
  • Manage food costs and usage by following proper requisition processes, storage protocols, standard recipes, and waste control measures
  • Ensure successful achievement of daily and weekly budgets, goals, and objectives
  • Perform other duties as assigned
EDUCATION AND EXPERIENCE

  • 1-3 years of kitchen management experience required
  • Culinary arts degree preferred
  • Food Managers Certification required
  • Strong guest service, administrative, and follow-up skills
  • Comfortable communicating and collaborating with guests, peers, subordinates, vendors, or partners
  • Intermediate to advanced understanding of food and beverage functions
  • Advanced knowledge of food, health, and safety regulations
  • Availability to work during holidays, nights, and weekends with increased hours during peak periods
  • Frequent standing, walking, lifting, twisting, bending, and navigating stairs
