Job Overview
Wyndham Grand is seeking a Culinary Operations Manager to lead our culinary team at the Wyndham Grand Jupiter location in Jupiter, Florida.
Position Summary
The Culinary Operations Manager will oversee and coordinate all facets of food production within the hotel, ensuring that our food and beverage operations are both profitable and of the highest quality. This role involves training kitchen staff, adhering to corporate quality standards, and enforcing food specifications, portion control, and sanitation practices. The Culinary Operations Manager will also be responsible for managing food and labor costs while enhancing guest satisfaction.
Qualifications
A culinary degree (2-year, 3-year, or 4-year) is required, along with a minimum of 4 years of progressive experience in a hotel or similar environment. Previous supervisory experience is essential.
Knowledge of food and beverage preparation techniques, as well as local health department regulations, is necessary.
Physical Requirements
This position may require long hours and involves medium work, including lifting up to 50 pounds occasionally and 20 pounds frequently.
Key Competencies
Maintain a warm and welcoming demeanor at all times. Effective communication skills, both verbal and written, are crucial for interacting with employees and guests in a courteous and service-oriented manner. The ability to listen, understand, and address concerns raised by staff and guests is essential.
Multitasking and prioritizing departmental functions to meet deadlines is vital. Approach all interactions with guests and employees with attentiveness and courtesy.
Regular attendance in compliance with company standards is required, with a flexible schedule based on hotel needs.
Maintain high standards of personal appearance and grooming, including wearing nametags, and comply with company policies to ensure safe and efficient hotel operations.
Essential Responsibilities
Collaborate with other food and beverage managers to address any operational issues. Keep your supervisor informed of any significant problems or matters requiring attention.
Monitor all aspects of loss prevention in kitchen areas and prepare necessary reports promptly. Ensure the quality of all food products and their presentation.
Assist in preparing reports related to payroll, revenue, and employee schedules. Oversee daily kitchen operations and respond to guest complaints in a timely manner.
Ensure compliance with standard operating procedures and requisition processes. Conduct staff performance evaluations in line with company standards.
Work closely with the Executive Chef and Director of F&B to develop and implement menus. Design and manage the employee cafeteria menu and operations.
Assist in training and directing kitchen staff to ensure adherence to quality standards, specifications, and sanitation practices.
Understand and implement corporate promotions in food outlets, and ensure compliance with local health department regulations.
Review and approve weekly payroll and verify food purchases for quality and pricing.
Communicate any maintenance issues to the engineering department and assist in catering sales for special menus.
