Job Summary

Troon International is seeking a highly skilled and experienced Executive Chef to join our team as a Kitchen Manager. This is a key leadership role that requires a strong background in food and beverage operations, as well as excellent communication and management skills.

Key Responsibilities

  • Manage the daily operations of the food and beverage department, including menu planning, inventory management, and staff supervision.
  • Oversee the preparation of catered and concession functions, ensuring high-quality food and exceptional customer service.
  • Hire, train, and develop line cooks, chefs, and other employees in the F&B department.
  • Develop and implement short- and long-term management strategies for F&B operations, including forecasting and budgeting.
  • Maintain cost controls and conduct monthly inventory to ensure efficient operations.
  • Implement and maintain F&B sales and marketing programs to drive revenue growth.
  • Coordinate staffing and scheduling to meet business needs.
  • Institute and implement all IGP Human Resources guidelines to ensure compliance.
  • Select and manage menus for bar and grille and banquet service.
  • Source and manage food and beverage inventory through the PO buying process.
  • Ensure quality assurance, guest service, and training of all employees.
  • Uphold IGP Food and Beverage policies and procedures.
  • Oversee event setup and ensure attention to detail for client satisfaction.
  • Conduct daily walk-throughs to ensure compliance with Department of Health regulations.
  • Maintain the appearance, upkeep, and cleanliness of the kitchen.
  • Perform closing procedures and ensure accurate cash handling practices.
  • Perform other duties as assigned by supervisor or manager.

Working Conditions

This role requires prolonged standing, walking, bending, and scooping. The employee will regularly reach with arms and hands and occasionally lift up to 30lbs. The employee will use sight, reading, wrist movement to serve meals and beverages, operate food service equipment, and clean food service areas. Specific vision abilities include close, distance, color, and peripheral vision, and depth perception. The noise level is typically moderate to loud, and the employee may work extended hours during golf and holiday seasons, as well as weekends and holidays.
