Executive Chef

The Executive Chef is responsible for overseeing the culinary operations of the Marriott Lancaster at Penn Square, ensuring that all food items are prepared to the highest standards of quality and presentation. This includes supervising and assisting in the preparation of all food items, maintaining the cleanliness and sanitation of the kitchen and storage areas, and minimizing waste and maximizing cost/production ratio.
Key Responsibilities- Leadership and Management
- Supervise and train kitchen staff to ensure that they are knowledgeable about menu items, preparation methods, and presentation standards.
- Develop and implement systems to control waste, minimize costs, and maximize productivity.
- Conduct regular meetings with kitchen staff to discuss menu planning, inventory management, and other operational issues.
- Menu Planning and Development
- Develop and implement menus that are appealing to guests and meet the culinary standards of the Marriott brand.
- Source high-quality ingredients and suppliers to ensure that menu items are prepared to the highest standards.
- Conduct regular taste tests and menu reviews to ensure that menu items meet the culinary standards of the Marriott brand.
- Food Safety and Quality Control
- Ensure that all food items are prepared and presented to the highest standards of quality and presentation.
- Conduct regular inspections of the kitchen and storage areas to ensure that they are clean and sanitary.
- Develop and implement systems to ensure that food safety and quality control standards are met.
- Inventory Management and Cost Control
- Develop and implement systems to control inventory levels, minimize waste, and maximize productivity.
- Conduct regular inventory audits to ensure that inventory levels are accurate and that costs are under control.
- Develop and implement systems to ensure that costs are under control and that productivity is maximized.
- Customer Service and Guest Satisfaction
- Ensure that all guests receive exceptional service and that their needs are met.
- Develop and implement systems to ensure that guest satisfaction is high and that customer service standards are met.
- Conduct regular guest satisfaction surveys to ensure that guest satisfaction is high and that customer service standards are met.
- Education and Experience
- Bachelor's degree in Culinary Arts or related field.
- Minimum 5 years of experience in a hotel or restaurant kitchen, with at least 2 years of experience in a supervisory or management role.
- Skills and Qualifications
- Strong leadership and management skills.
- Excellent culinary skills and knowledge of menu planning and development.
- Strong communication and interpersonal skills.
- Ability to work in a fast-paced environment and to prioritize tasks and manage multiple projects.
- Ability to maintain a clean and sanitary kitchen and storage areas.
- Ability to develop and implement systems to control waste, minimize costs, and maximize productivity.
