Centurion Restaurant Group busca un Sous Chef experimentado para unirse a nuestro equipo de cocina. Este es un puesto supervisivo y administrativo donde asistirá al Chef Partner en la planificación de menús, la gestión de inventarios de alimentos y la aplicación de estándares de servicio de alimentos. Este puesto informa directamente al Chef Partner.
Responsabilidades:
- Complir con los estándares de servicio y asistir a asegurar el mismo de todos los empleados de la cocina.
- Asistir en la gestión de las operaciones diarias de la cocina, coordinar los horarios de producción de alimentos y asegurar el máximo nivel de calidad, sabor y presentación de los alimentos.
- Participar en la preparación de alimentos, producir alimentos de alta calidad, sabor y presentación y expedir durante los períodos de alta demanda de comidas como sea necesario.
- Controlar los costos de alimentos asistiendo en la capacitación de los empleados de la cocina en los métodos adecuados de preparación y manipulación de alimentos, capacitando a los empleados de la cocina, restaurante y estantería en cómo manejar los alimentos sobrantes.
- Asegurar que la cocina cumpla con los estándares uniformes, de aseo y apariencia.
- En conjunto con el Chef Partner, establecer metas para la cocina; anticipar y resolver problemas concernientes a todos los aspectos de la cocina, anticipar tendencias, implementar ideas y actividades aprobadas para aumentar los beneficios y reducir los costos.
- Asegurar el cumplimiento estricto de las normas de la salud y la higiene y las directrices de manipulación de alimentos.
- En conjunto con el Chef Partner, asegurar el cumplimiento de las recetas y las especificaciones de productos; capacitar a los empleados de la cocina en todos los menús.
- Mantener una comunicación efectiva dentro de la cocina, ser receptivo a las sugerencias y preocupaciones de los empleados y trabajar para resolver problemas.
- Ordenar alimentos, suministros o bebidas y cumplir con los PARs y los niveles comerciales.
- Realizar inspecciones regulares de toda la cocina/áreas de lavado de platos y refrigeradores, y actuar de inmediato para corregir las deficiencias encontradas durante la inspección.
Requisitos del Candidato:
- Deberá tener disponibilidad de turnos abiertos sin restricciones.
- Título de bachillerato o equivalente.
- Grado culinario preferido.
- Experiencia culinaria previa.
- Habilidades preferidas: matemáticas básicas, comunicación verbal excelente.
- Aptitud positiva.
- Capacidad para hablar y escribir en inglés de manera fluida.
